WTF Thursday

Blueberry Oatmeal Waffles for breakfast. Although I bought the Waffle Maker specifically to make Blueberry Waffles, I find I like the Pumpkin Waffles better. Regular irony or 'waffle' irony?
Lunch was an open-faced Tempeh Reuben. Not 'restaurant quality', but it was my first attempt.
Dinner was Organic Harmony Soup Blend Mix. Pretty great with lots of Chili Powder, Garlic, Onions, Celery and Carrots.
Coconut Bliss Chocolate Hazelnut Fudge for dessert. Because you only live once.
Lunch with Mom tomorrow.

Ha! I'd say that's waffle irony, for sure. That's great that you're enjoying it so much.

The reuben looks great and the recipe looks easy. I might have to try my hand at that (Mike is not a fan of kraut & gags at the mere smell of it). I think I'd mix the kraut in with the sauce.

Soup looks awesome, as does dessert. A five star day!

OoOooh the reuben! Nice job! Did you make a dressing for it? Did you use bread, or is that just piled on top of tempeh slabs?
I haven't had any kind of waffle recently so these look pretty good to me but at least now you can go back to the pumpkin knowing you tried.

They look delicious though! The pumpkin waffles are pretty tough to beat but blueberry oat does sound pretty great. I think you did a great job with the reuben! And that soup looks so hearty and chunky and delicious. I love a good hearty soup.

Reubens are my favorite sandwich and I've never tried to make one myself. Looks delicious especially with the side of olives. Waffle irony, haha. I want to make that into a t-shirt.

I'm sad you didn't love the blueberry waffles, but they did turn well appearance-wise! I will have to try the superior pumpkin waffle recipe. ;)

I think your reuben looks delicious! I've never purchased sauerkraut, but really should.

Molly, I really believed the Waffle Iron would go the way of my Spiralizer and Garlic Roaster. No one is more surprised than me that I've used it three times. Hope you make the Sandwich, if only watch Mike gagging.

FF, it was Nasoya bottled Thousand Island Dressing and there was Bread under that slab of Tempeh. I know you're a big Sauerkraut fan, I need a rec on a good brand to buy cuz Boar's Head didn't cut it for me.

VaVa, first you got me hooked on the Vodka, now the Pumpkin Waffles. What will it be next? And what happened to days two & three of your cleanse?

Nikki, the Reuben is a pretty easy Sandwich to make when done all in one skillet with a lid. Hope you try.

Ingrid, it was your BB Waffles that made me buy the Waffle Maker in the first place. Why weren't my Blueberry Waffles as good as your's? What's your secret?
