WFH Wednesday

Lunch was the leftovers of this Chicken & Rice Dish that I made last week.
Dinner was a Nora sandwich made with TJ's Chipotle Hummus on a toasted Ezekiel English Muffin, Bread & Butter Pickles on the side. I always have to a Nora sandwich on WFH days. Whether it's for lunch or dinner.
Dessert was an ancient, chemical-laden cookie I bought at Big Lots several years ago. Several cookies are pictured below, but only one was actually ingested. Bleh! This was the first time I ever ate food that had actually gone bad.
Lots of Black Swan Merlot to try and get that disgusting taste out of my mouth.

Another Good Food Day

Lunch was Curried Tempeh Salad with Tomatoes on Ezekiel Bread. Route 11 BBQ Chips on the side.
It was almost 100 degrees outside today, so as to avoid turning on the oven, dinner was another stove top recipe: Gnocchi with Chard & White Beans. The Gnocchi was from Big Lots.
It was very tasty, but I doubt I'll make it again.
Lots of Black Swan Cabernet Sauvignon.

Another Great Day -- Food and Otherwise

Lunch was the Boca Burger(s) from Makenzie's,,,
Dinner was this recipe that I made using TJ's Chickenless-Chicken Strips. I also added some diced Red Pepper for color.
Dessert was a spoonful of TJ's Valencia Peanut Butter with Vegan Chocolate Chips...
Washed down w/ Stoli and some soda from Big Lots. (The soda was from Big Lots, not the Stoli).

A Good Day All Around

I took the day off work, so lunch was made at home -- a combination of these two recipes. I subbed TVP for the meat and added a dollop of Sour Supreme.
About a month ago, we adopted three Guinea 'Keets'. Since I was around all day, I let them outside for the first time today. They've been 'homed' to our barn and they're supposedly going to help reduce the tick population. Ticks and Lyme Disease are horribly prevalent here and Guineas are the all-natural solution.
I practiced making Mojitos again. They're starting to get better but the Mint to Lime ratio still isn't quite right.
Dinner was Boca Burgers and Tater Tots.
For dessert, I broke open an old bag of Peanut Chews.
If only every day was as pleasant as today.

A Boring Post

This post is not worth commenting on so I don't want anyone wasting their time doing so. Lunch was the Vegetarian Lettuce Cups and the Ma Po Tofu at PF Changs. 37 TJ's Gourmet Jelly Beans for dessert.
Dinner was a TJ's Valencia PB and Banana Sandwich on Ezekiel Toast.

WFH Wednesday

Lunch was a Nora sandwich made with WF's Roasted Red Pepper Hummus on a toasted Ezekiel English Muffin, Bread & Butter Pickles on the side.
Dinner was Ravioli with Sausage and Peppers. I used Rising Moon Spinach Florentine Ravioli and Tofurky Italian Sausage. It was okay, I prefer Tomato Sauce on my Ravioli.
Dessert was a Crispy Rice Choco Bar. Why? Because after dinner, our electricity went out so I couldn't open the fridge for ice cream. The rest of this post is being brought to you courtesy of our Honda generator. It's amazing.

Thrifty Tuesday

Lunch was two Bean Burrito's with no cheese from Taco Bell. I haven't had these for years, they're still .99/each, and they still taste exactly the same as they did 20 years ago. Later I had a little bag of Nuts.
When I came home, I made a Mojito for the first time. The first one was way too Limey. The second one was better, more Minty, but a little warm due to lack of ice. Maybe the next one will be just right. Practice! Practice!
Dinner was the rest of the Soba Noodles with Peanut Sauce and Tempeh. This certainly was an economical recipe, I got several meals out of it, and I will look forward to making it again.
No dessert tonight.

Tempeh Two Ways

Lunch was the Curried Tempeh Salad that I saw on Little House of Veggies. It was super delicious on Ezekiel Toast with Tomatoes and Bread & Butter Pickles on the side.
Dessert was a Tall Soy Mocha Frappucino with No Whip from Starbucks. I started to drink it way too fast and suffered numerous brain freezes.
Dinner was leftovers of the Soba Noodles with Peanut Sauce and Tempeh.
I (successfully, without blood shed) cut a big mat off the cat tonight, but he made such an upsetting noise while I did it that I lost my appetite for dessert. Anyways, lots of Charles Shaw Cabernet.

Due to a laser gum cleaning at noon, I wasn't able to eat lunch. I made up for it with a fantastic supper -- Soba Noodles with Peanut Sauce and Tempeh.

Another Okay Food Day

Lunch was BBQ Seitan and Kale from Whole Food's Healthy Bar. Unfortunately, WFs pulled all the Kombucha off the shelves due to something about high alcohol content. I hope it comes back soon.
Dinner and dessert were all rolled into one -- TJ's Valencia PB & Banana Sandwich on Ezekiel Toast.

An Okay Food Day

The mess below is my lunch from Quiznos. Based on Quarry Girl's Post, I went in to my local Quiznos and requested a "Veggie" on a "Torpedo". The nice woman working there said I could only get the "Veggie" on a Sandwich or Flatbread. Confused, I got it on the Whole Wheat Sandwich Bread. After coming back to my desk and re-reading Quarry Girl's Post, I found out I was supposed to ask for a "Torpedo" with no meat, hence just leaving the veggies. Oh well, $7.79 later (plus the cost of the Tofurky) I am older and wiser. This is also why I have yet to risk ordering a vegan Frappucino from Starbucks. I'm sure I'll wind up ordering a non-vegan one.
Dinner was the rest of the Tofu Benin with Tomato-Peanut Sauce (Potatoes on the side) .
Dessert was Blueberry Cheesecake Ice Cream just to mix things up.

A Pretty Good Food Day

Lunch was a Spring Veggie Sandwich from WF's...
Dinner was Martha Stewart's Black Bean and Brown Rice Cakes with Tomato. Roasted Broccoli and Kamut on the side. I made a make-shift Ranch Dressing based on several different internet recipes (1 TBS Veganaisse, 1-2 tsps Apple Cider Vinegar, Garlic Powder, Onion Powder, Parsley, Dill, Soy Creamer) that tasted pretty darn good.
Dessert was a slice of Devil's Food Peanut Butter Cake. I must emphasize that this recipe is really outstanding. Reminds me of one of my childhood favorites -- Drake's Funny Bones.
