Sunday, April 29th

Susan V's Omelette for One, a Hash Brown and Smart Links for breakfast. This was my first time making a vegan Omelette and I was very happy with how it turned out, even if it doesn't look like the real thing. Once I get the hang of keeping it in one piece, I'll try some fillings.
Mr. SV & I split an order of Spring Rolls $4.95 
I had the Green Curry with Tofu $13.95 - Green Beans, Broccoli, Bamboo Shoots and Basil Leaves in Coconut Green Curry over Linguini at Thai Deelish.
Blessed Mama's Maple Glazed Seitan Roast with HP Sauce and a Baked Potato with Sour Supreme for dinner.
Lucky Readers, I did some nature photography in the backyard this afternoon. Second from top is Soapwort, bottom is a droop of future Black Cherries. The other two are weeds of which we are overrun.

Lucky you with such a beautiful backyard! I trust there were no baby bears assisting with your photographs. Even if they are weeds, they certainly look nice! I'll trade you the dandelions and wild grass I spent all morning pulling.

Good looking eats, too!

I've been checking the Vegan Van schedule to see when our paths might cross - it will be soon.

Whoa that breakfast looks great! I'm such a sucker for a good breakfast! That omelette recipe sounds great, I'll definitely have to give it a try someday.

Looks like you had a lovely lunch as well as a delicious dinner. I agree with Ingrid, you really do have such a beautiful backyard, weeds and all! Beautiful pics, thanks for sharing!

The only excuse I could possibly have for not eating those pb cups is not finding them. Hopefully that won't be the case!

What a delicious looking food day, starting with a vegan omelette - what a treat. I really want some green curry; that always looks so good. Nice to see the backyard flowers. I hope you'll share more of those with us.

Making a tofu omelet has long been one of my culinary goals. I've seen them around online, but I haven't done it yet. I always hated eggs - had to smother them in ketchup to get them down, but if an omelet was stuffed with enough goodies, I could eat them. Pretty weeds!

Ingrid, assuming Remy didn't do his business on the Dandelions, you could try cooking the leaves and or roots. Just a suggestion for a future project (for you, not me).

FF, no doubt there are beautiful flowers coming up where you live. I think someone once even wrote a book about a tree actually growing in Brooklyn.

Miss Rachel, I'm gonna try to share more non-food details. It's not easy for me since it violates the mission statement of the blog.

Blessed Mama, I loved smothering eggs in ketchup as well. This omelette doesn't taste the real thing, but the look and texture is pleasing. It is a good vehicle for ketchup.

Molly, I figured everyone has seen the regular flowers like Phlox and Iris, but maybe everyone hasn't seen these weeds.

Kimberly, Green Curry is so easy to acquire. Probably could find a jar at Big Lots.

I think your omelette totally looks like one! I've made Fat Free Vegan's omelette before too, and I agree, it is tasty. Zoa has a good formula for chickpea omelette too, which always turns out well for me.


Looks like a tasty day; I still think green curry and linguine are unlikely partners, but I'm sure it's yummy just the same.
