WTF Monday

A Cream Cheese & Cucumber on Toast for breakfast.
I believe these Artichokes at lunch might have been from spring 2011. They weren't that great.
Boca Burgers and TJ's Tots for dinner. Another hot house Tomato.
Caramel Pecan Cake from Vegan Treats via Loving Hut for dessert.
Coming up tomorrow: Working from home again. I foretell cereal for breakfast.

Caramel pecan cake?! That sounds ridiculously amazing. And it looks purdy too. So does your breakfast!

Bummer that the artichokes weren't that great but it looks like dinner certainly made up for it! I have to get my hands on some tots after this pantry challenge. I get jealous every time I see them :)

I agree with Sarah- that cake sounds amazing.

Have you ever had sweet potato tots? I tried them for the first time about a month ago and they were so different from regular ones.

I tried your dipping sauce with an artichoke yesterday - it was good! Same combo used today? I've had a bad 'choke recently as well, very dry.

Stop trying to tempt me with your tomatoes! I'm trying to be good, and wait til summer.

Too bad about the artichokes. I'm going to try them again too and we can compare notes. ;-)

The thing that really grabs me about this post is Caramel Pecan Cake - !!! Oh my that sounds and looks sooo good. I hope you enjoyed it.

VaVa, you'll have to keep the Tots in your freezer, not your pantry. Just FYI.

Molly, I have tried Sweet Potato Tots and was disappointed. Not sure if I should risk them again.

Ingrid, it is a pretty decent dipping sauce (I found it online, not my own creation). I tried to wait for summer tomatoes, but couldn't resist a sale.

Miss Rachel, glad to hear you're not giving up on the Artichokes. Just add a slice or two of lemon to your water when steaming and don't toss the actual choke. Peel off the fur on that thang and eat. Or whatever.
