Saturday, April 28th

Cucumber and Cream Cheese on WF's Russian Black Bread for breakfast

Mr. SV & I split an order of Summer Rolls $2.50 for an appetizer at Loving Hut this afternoon...
and I had the Pho $7.50.
 Dinner was Chickpea Cutlets with Sweet Potato Fries.
A Peanut Butter Coconut Drop for dessert.
Coming up tomorrow: Maybe something other than Cream Cheese & Cucumber for breakfast.

I especially love that you used that last little rump of bread, and even put a teeny cucumber on it. That's dedication. Or something.

Pho!! Isn't it great? "Summer" rolls instead of "spring". . .what's the difference?

I need to get on the chickpea cutlets, those sound super tasty.

Summer rolls are the best. Are those green onions hanging out of them? That soup and dessert are looking quite yum!

I love the ends of the loaf of bread :) Those were my favorites when I ate it! Yay for Loving Hut! That Pho looks so delicious and the summer rolls too! I love the summer rolls at Loving Hut. Dinner looks great and that dessert is perfect! I kinda feel like I want to hunt those down :)

Ingrid, Spring Rolls are deep fried. Summer Rolls are just rolled in lightly steamed rice paper. You can get on the Chickpea Cutlets after you hit the Vegan Van in downtown Denver.

Molly, I believe they were green onions 'hanging out'. Kinda strong but not overwhelming.

VaVa, the Coconut PB Cups are gluten free. You have no excuse.

i think cucumber and hummus combos are great so i'm sure i would love cream cheese!
