Monday, April 16th

Banana & PB for breakfast....
A Veggie Burrito Bowl from Chipotle for lunch...
Dinner was Blessed Mama's Maple Glazed Seitan Roast (great stuff! easy recipe that makes enough to feed a hungry vegan for more than five days!) with HP Sauce, Baked Potato and Roasted Aparagus...
No dessert. It's 85 degrees and I'm sweating to death. It's like August but in April.

We didn't get past 60 degrees today, so I'll send you a cold front via internet.

I thought of you and your lunches recently, realizing that I am always planning food I can eat cold - so as to not use the microwave. "Shen probably goes out for lunch, so she doesn't have to worry about heating."

Looks like a great food day! Chipotle is always a great choice and your dinner looks lovely. It was super hot up here too, it would have been a great beach day! I think it is going to cool down a bit. I have a feeling this summer is going to be HOT.

Re: the glutenous pie crust... I'm thinking I'd be happy with just the filling!!

Yeah it was seriously hot today. I would not have had the desire to roast the potatoes and asparagus. Unless you cook potatoes in advance?

Seems like a great food day, and dinner looks exceptionally good. Yesterday totally seemed as if it was the middle of summer. I wish I could just relax and let the weather be, but I keep thinking about climate change and then I get worried.

(BTW, I loved the kitten pictures Sunday. I wish I could pet the kitties through my computer screen.)

Ingrid, too true. I'm anti-microwave at work and at home. Probably have had my food nuked in restaurants though. Only 28 more days left till you, too, can enjoy a hot lunch.

VaVa, hope you equip yourself with a cruiser bike for riding along the boardwalk this summer.

FF, Mr. SV wasn't home yesterday, so I was able to turn on the oven for hours. Helps to live in a mult-story domicile.

Miss Rachel, I take comfort in knowing I'll be dead by the time global warming really kicks in.

It has an extended frame and forward pedaling which make it an exceptionally comfortable cruiser for taller people.
