Bobs Red Mill Quick Cooking Steel Cut Oats for breakfast. These were almost as good as the slow-cooking.
WF's Red Pepper Hummus on a Wegman's Everything Bagel for lunch.
Paul Sorvino Arrabiatta Sauce and TJ's Meatless Meatballs for dinner.
The other half of my Chocolate Cupcake from Natalia's Elegant Creations for dessert.
Back to work tomorrow. Seriously intending to pick up something of interest for lunch.

Now THOSE are some tomato slices. I hate when people cut them so thin! The bagel is so huge and totally overpowers the tomato. It would be a shame to overpower beautiful ones like you've got there too. Plus, we've got to eat them while we can. Now I've got bagels on the brain.
The tomato slices are a really pretty color! Are they heirloom?
Glad you enjoyed the time saved with the oatmeal this morning. :)
Holy crap what a gorgeous tomato! Gotta be heirloom right? It looks so good! Glad the oatmeal didn't take up too much of your time ;) Looks great though! The frosting on that cupcake looks really fudgey, yum! Great looking day!
oh my gosh your lunch looks AMAAAAAZING! hummus with those gorgeous tomatoes! holy camoly!
The one thing I really miss since being gluten free is the bagel. I love bagels and have found no acceptable non-gluten substitute. The tomato & hummus topping is perfect. And the green olives are just more of my favorite. A very nice looking lunch :)
The hummus & tomato with the bagel looks awesome! I need that kind of willpower to only eat half a cupcake, especially one that good!
Yeah, that is one funky looking tomato, but I mean that as a compliment. :-)
Hey Now!!!
FF, yeah, that was an interesting stream of consciousness comment. I'll have what you're having.
Molly, yes, it's an heirloom Tomato. So great.
VaVa, I did very well yesterday. I plan to try making my own Cuppers like you do though. Believe it or not.
GFHTummy, the lunch was all pushed into my face in record time.
Nikki, at least the Tomato, Hummus and Olives are GF...
Mary, I know. I learned from experience that eating an entire cupcake from this bakery is way too much sugar.
Miss Rachel, it's an heirloom Tomato so the funkier the better.
