Lunch was a modified Nora sandwich made with TJ's Chipotle Hummus on a toasted Ezekiel English Muffin (no Spinach on hand today. Spinach is essential for this sandwich).
Dinner was leftover Lentil Soup with sliced Italian Tofurkey.
Dessert was Rice Divine Mudd Pie.
Lots of Little Penguin Merlot.

Chipotle hummus sounds really good. I know you said that you thought those lentils you made were too plain, but they look really good to me.
