Soothing Saturday

Lunch was at One Block West. I don't usually care for Portobello Mushroom sandwiches, but this one was outstanding -- not sloppy or heavy -- just a very refined thin layer of 'shroom, a few slivers of Roasted Red Pepper, Caramelized Onions, Arugula and a fine Balsamic Vinaigrette. This could give PM Sandwiches a good name. The Baby Arugula on the side was tossed with Lemon Juice and Pine Nuts. Super refreshing.
Dinner was two Gardein Cutlets with Lentil Pilaf...
Dessert was a couple Coconut Peanut Butter Cups...

I sent out three resumes today, so just one bottle of Matthew Fox Merlot was sufficient tonight. Perhaps there is hope for the future.

I'm with you on the portobelloa. I tend to find them too hearty, but I think a thinly sliced sandwich sounds appealing. GL on the jobs!

Those peanut butter cups look really cool! I've never seen anything like them!

oh whoops, i should have started at this post, then i would have seen that you bought the pb cups. lol. i love portobella sandwiches, and yours sounded really good with carmelized onions....mmm. nd the rice pilaf, perfect comfort food right there
