Friday, July 29th

Lunch was at Brio. The 'Citrus Garden Salad' $9.95 Fresh Linguine tossed with Spinach, Peppers, Carrots, Scallions, Basil, Cilantro, Dried Cranberries, Slivered Almonds, Lemon Vinaigrette and topped with a spicy citrus glaze.
Tofurky Kielbasa and Zucchini Pancakes for dinner.
Coconut Mini Sandwich with heavy freezer burn for dessert (which explains the strange cropping).
Vodka etc.

I love pasta in salads, sounds like a winner for lunch. I love the mustard squiggle on your tofurky sausage; not everyone gets to hear that! lol :D

Vodka has a wonderful way of dulling freezer burn.

I will definitely have to try that pasta the next time I end up at Brio.
I might have missed this answer, but I'll ask anyway: what goes with your vodka? :) I'm a club soda with a lime kinda gal! Hope you and Mr.SV have a lovely weekend!

Jessica, I used to work with a Russian guy whose wife would pack him a bunch of Zucchini Pancakes (during summer). Occasionally, he'd share a Pancake with me. I never would've guessed that years later I would find a recipe on the internet and make them myself.
