WTF Wednesday

Kashi Autumn Wheat for breakfast with Rice Milk...Lightlife Bologna with lots of Vegenaisse on a WF's Pretzel Roll for lunch.I've had this container of Tofutti Better Than Ricotta Cheese sitting around for about a month..Finally cobbled together some Stuffed Shells with it using various recipes found on the web. I mixed the TBTR with a package of thawed Chopped Spinach, a sauteed Onion & Garlic Clove, some S&P and topped with Prego and Cheddar Daiya. Two thumbs up! Very creamy and delicious! Definitely better than Ricotta Cheese!
A Carob Peanut Butter Cup $1.09 for dessert. Not the best PB Cup I've ever had. Sjaak's was better.

Funny, I had heard not great things about that ricotta cheese but your shells do look great!

I concur - those stuffed shells sound and look really tasty! I think we'll have to get our tomato fix through ketchup and Prego, as you previously mentioned - tomatoes are not up to snuff.

I, too, have very high standards for my peanut butter cups.

I had NO CLUE that tofutti made ricotta! That is a wonderful thing to know :) Your shells look amazing, I am definitely jealous of them.

The peanut butter cup looks yummy. Have you ever made the peanut butter cups from The Kind Diet? They are pretty easy and really tasty.

I've seen that ricotta on another blog, but it's not available around here yet. I'm curious to try it. Your shells do look like cheezy, saucy perfection.

Me too, me too, I think your shells look AMAZING! Also, ever since you've been posting that pretzel bread, I've been meaning to try to make own. It looks so good!

FF, the Tofutti Better Than Ricotta probably wouldn't fit in with your new clean lifestyle, but I was impressed it.

Ingrid, guess we're not the only vegans searching for those Reeses' replacement.

VaVa, yes, I've made the Kind Diet PB Cups two or three times and they are definitely better than anything I've bought so far. Unfortunately, that doesn't stop me from continuing to buy vegan PB Cups that disappoint.

Rose, for once we on the east coast have something that you on the west coast dont have!

Stacy, good luck making Pretzel Bread! That seems like an impossibility to me, but Pretzel Bread must come from somewhere.
