There are some days when I can think of a million things I want to eat, but today was one of those weird days when I have no clue what to eat. That's pretty much why I started this blog, for people having days like this. Anyway, I took today off work, so lunch was at home -- a Bologna Sandwich on WF's Pretzel Bread.
Lunch was Seitan Stir-Fry and Collards off the Whole Food's Health Bar. Followed by a small pack of Peanuts.
Dinner was leftovers --mixed Vegetables (Green Beans, Cauliflower, Red Pepper & Chickpeas) in Jalfrezi Sauce , Zucchini Pancakes and half a Tofurky Italian Sausage.
Dessert was Chocolate Hazelnut Coconut Bliss on a slice of the cake that I'm eating entirely by myself.
Dessert was Chocolate Hazelnut Coconut Bliss on a slice of old cake. The Coconut Bliss is definitely growing on me, it's quite luscious and what not. My Whole Foods only has a few flavors -- Chocolate, Vanilla, Mint, Coconut & Hazelnut Chocolate -- but I can now see buying this ice cream again....if it goes on sale...
After all the sugar at lunch, instead of a sweet, I had a half of a TJ's Chickenless Chicken Sandwich on Ezekiel with Vegenaisse a couple hours after dinner...
The Zucchini Pancakes were so tasty, I ate three more after this and then didn't have room for dessert. I did, however, have room for lots of Liberty Creek Cabernet Sauvignon.
Lunch was Toffuti Cream Cheese with sliced Olives on a toasted Wegman's Everything Bagel...
Dinner was mixed Vegetables (Green Beans, Cauliflower, Red Pepper & Chickpeas) in Jalfrezi Sauce on Barley.
Vegan Tickles recently posted about Veganomicon's Fudgy Wudgy Blueberry Brownies, so I had to try them. These Brownies were really delicious paired with a scoop of Coconut Bliss Chocolate Hazelnut Fudge, however, they still aren't the ideal fudgy vegan Brownies I've been still searching for.
Dinner was Chickpea Cutlets with Mustard Sauce (Vegenaisse & Dijon 50/50 stirred up w/Capers), Roasted Zucchini and Rice & Beans. (Yes, I thought I'd eat some green sh*t to break up all the beige and brown sh*t I usually eat).
Dessert was more delicious beigish brown sh*t -- I mean cake!
Ever since Carissa's post, Coconut Bliss has been preying on my mind. It was .50 off today -- only $5.49/pint! Woohoo! I chose Chocolate Hazelnut Fudge and while it was as fudgy and creamy as could be, my taste buds could not detect the reason for the exorbitant price.
A bottle of Harthill Farms Cabernet Sauvignon was also enjoyed. $4.99 but at least it had a cork.
Lunch was at Obrigado Restaurant. They don't have any vegan entrees, so, after calling ahead, they made a special Veggie Pasta dish just for me. The Spaghetti was tossed with Zucchini, Chickpeas, Carrots, Basil, Tomatoes, Capers, tons of Garlic and lots of spices. They did a great job for $8.95.
Dinner was Kamut Spaghetti tossed with Road's End Organic Gravy, sauteed Onions, Sun-Dried Tomatoes, Mushrooms and Crumbled Breakfast Sausage.
Today I had a bit of an icing disaster. I used this mix to bake a cake, which was very delicious (the frosting mix that accompanies it is not vegan)...
