WTF Monday

Breakfast was some of Sarah Kramers Banana Pancakes with TJ's Maple Syrup. This is my 'go to' vegan pancake recipe because it is so easy.
Tofurky Bologna and Vegenaisse on a Toasted Everything Bagel for lunch.
Steamed Tempeh with A1 Sauce, Roasted Asparagus and TJ's Tri-Color Quinoa for dinner. Not so delicious.
So Delicious Turtle Trails for dessert. Definitely so delicious.
Hopefully get to PF Changs tomorrow.

You and Ingrid have the pancakes on lockdown. Now I won't even try.
Bummer about the tempeh. maybe a thicker sauce would have helped?

Oooh those pancakes look great! I've been craving pancakes lately but have been way too lazy to attempt to make them. They never come out the same gluten free either.

Too bad your dinner wasn't great. Was there a specific part that you didn't like or was it the whole meal? At least that yummy ice cream made up for it!

Re: Cooking for my mom - I don't cook for her so much since she's a little weary of some stuff but she LOVES the baked goods, granolas, waffles, muffins, etc. that I make. My family is very supportive of me being a vegan but I don't anticipate them chowing down at a vegan restaurant any time soon.

We haven't made pancakes for a very long time. Must rectify that!

Bummer about your dinner, but I'm glad that dessert made up for it.

Problem with dinner: no peanut butter.

That So Delicious is the one I plan to buy once my current stash of ice cream runs out. Which won't take long, seeing as I'm eating over a pint a day at present.

Which part? The whole dinner? Just the quinoa? I have forgotten to rinse quinoa and it was horrifically sour, although many brands are pre-rinsed which is nice.

Dessert does look delicious!

Here's hoping that Ma Pao Tofu happens tomorrow. Or lettuce wraps.

The pancakes look amazing, i am never that ambitious or co-ordinated in the mornings. Sometimes plain tempeh needs more help- stir fried cubes with a little sesame oil and soy sauce is good.
Hannah (above comment) is right about peanut butter.
Those So Delicious people are SO right about that.

FF, I was thinking about Ingrid when I made these Pancakes cuz they puffed up so well. The Tempeh would've been better raw. Bleh!

VaVa, the Tempeh was horribly bitter and the Quinoa was undercooked. Glad to hear your parents aren't missing out on your great baked goods. My mother wouldn't eat at a vegan restaurant either even though she says she would.

Molly, you are able to get vegan pancakes at Riverwest Co-op. We don't have anything like that near us.

Hannah, I highly recommend Turtle Trails. Although, if you don't like Take 5 Bars, you might not like my recommendations...

Ingrid, I have a tendency to undercook Quinoa so it was kinda wet. The Tempeh was very bitter. I should try to explain better why something is bad or good when I post.

Unknown, I'm not ambitious or co-ordinated in the mornings either. I make the entire batch of Pancakes and then reheat them as needed. These reheat well.

Oh, I loved Take 5 bars back in the day and still love the caramel/peanut butter/pretzel/chocolate combination. I'm just a chocolate snob now and need a more fancypants version than the mass-market kind ;)
