Friday, May 31st

An Organic Fuji Apple and Two Energy Bites for breakfast...
Lunch was at PF Changs. Starting with some Spring Rolls...
and I had my usual, MaPo Tofu...
My mother ordered vegan today, the Coconut Curry Vegetables, which she enjoyed: 
Eggless Egg Salad for dinner.
Sorry for being so verbose today. More of the same tomorrow.

So awesome that your mom ordered vegan. Is she vegetarian or plant based at all?

Verbose?? My comments often have more text than your posts! Hahaha....
I have had the apple and energy bite bfast combo a few times this week- its a great combo. The coconut curry veg sounds delicious- is there tofu in it? Looks like pf understands the importance of generous veg, a big plus for me.

That MaPa tofu looks good! I love spring rolls, I could eat them all day. Hmm, I may have to have Chinese tonight now!! That's great that your mom/mum ordered vegan too :) well done mummy! :D

Nice shot of the apple and energy bites, and I have been thinking about needing to return to PF Changs at sometime soon, both the rolls and tofu look phenomenal.

Molly, unfortunately, Mom has no compassion for animals whatsoever, and mainly survives on Peanut M&Ms and Edy's Ice Cream.

Unknown, your whereabouts of late have been like your name, Unknown. I live in fear of being boring, hence the 'terse' posts. There was Tofu in the Coconut Curried Vegetables. It looked pretty good.

Lana, no PF Changs on the other side of the pond? I think you guys are known to have better Chinese food than we Yanks have. Better Indian food as well.

Ingrid, I'm not sure how PF Changs does it, but we need to support what it is they do.
