WTF Tuesday

Bob's Red Mill Steel Cut Oats with Dried Cranberries for breakfast. I do not know how so many vegans eat Oatmeal for breakfast. It takes about a half hour to cook and you have to keep stirring every few minutes. Fuggedaboutit!
TJ's Chickenless Chicken and Avocado Open Faced Sandwich for lunch. Really good combo.
Field Roast Franks with Mac & Cheese from Everlasting Life Cafe for dinner. Gosh I ate well today.
Speaking of which: A few melt-in-your-mouth 'Pecan Fingers' from Outpost Natural Foods (aka the Swap Box from the Rambling Vegans) for dessert.

Coming up tomorrow: More WTF Grub.

no kidding - you did have an awesome food day! that sandwich for lunch looks out-of-this-world! YUM! and how are those cashew fingers?! I saw them in the store about an hour ago, and debated trying them! have a good night!

I had a Field Roast frank for dinner tonight, too. Good stuff!

Aren't those fingers awesome? I love one on the weekends with my morning coffee.

Pecan Fingers. . .yes please! I can totally imagine how amazing they must taste. Having experienced recently the chik'n and avocado combination, I know it was a good choice.

Pecan Fingers, yum! They look amazing!! I love oatmeal so much it's totally worth spending the time to make it. Especially on a chilly day, yum!

The chik'n and avocado combo sounds great and the open faced sandwich looks really yummy! A great food day indeed!

The whole oatmeal time thing is a big part of why I started making overnight oats. Perhaps this is the start of you going high-raw??

Have you tried the quick cooking steel cut oats? Or if you soak them overnight and cook in the morning its down to about 10min with regular steel cut...

Hmm... when I cook oats, I don't stir them much. I just let them simmer on the stove and check back occasionally until the consistency looks right. However, your oats look prettier than mine so maybe I should start stirring.

And those pecan fingers make me realize I need to make some vegan pecan sandies sometime soon.

GFHTummy, I don't believe the Fingers were GF so it's good you abstained.

Molly, a single Frank? You are like Ingrid. Wish I could stop at one. A Pecan Finger (or three) and a Cup of Joe would definitely get the day off to a good start.

Ingrid, my Pecan Finger pics didn't come out well since it was getting dark out. Future pics will hopefully capture the full extent of their deliciousness since I'm unable to describe it. But thank you.

VaVa, I'm glad to know I'm not the only one taking note of how time consuming Oats can be.

FF, if I were going to make an overnight breakfast, it would be the Chia Pudding. Seems more worth the advance planning.

Unknown, I purposely bought the Steel Cut cuz I thought they were supposed to be 'the best' of the many different kinds. Especially when they're 'rough cut', supposedly. Am I detecting a vegan blogger in the making...;-)

Miss Rachel, even though I kept checking in, my Oats overflowed the 3 quart pot. You must use a larger pot to make your's. And, FYI, it is always time to make Pecan Sandies (and post the recipe on your blog).
