Eggless Egg Salad on a Toasted Ezekiel English Muffin for breakfast...
Green Curry with Tofu $13.95 - Green Beans, Eggplant, Bamboo Shoots and Basil Leaves in Coconut Green Curry over Linguini at Thai Deelish for lunch. No Groupon today, so no appetizers.
Boca Burgers with TJ's Veggie Chili and Roasted Cauliflower for dinner...
The other stale half a piece of Sweet 'n Natural Chocolate Raspberry Cake for dessert.
Coming up tomorrow: Grapefruit and Energy Bite for breakfast. Wish me luck on lunch.

Whoa, that curry dish looks pretty damn perfect. I love thai food, the spicier the better! Roasted cauliflower is always awesome and bummer that the cake was stale! It still looks pretty though :)

Stale or not, your dessert had me rummaging through the house for something sweet to snack on, despite it being almost 10. All I could find were raisins and an English muffin and that's really just sad.

Did you make your own eggless egg salad? I've seen a couple recipes for it, but not yet tried one. I've never seen it pre-made in any WF here, perhaps there hasn't been the demand.

I must be the only vegan who doesn't like curry..... I've tried so many different kinds, too. :( That dish looks fantastic.

Ingrid, I've never successfully made eggless egg salad. Store bought works well for me.
