I made this dinner last year (before I found out that you're supposed to focus the camera). We had it again tonight and it was even better. Millet, Butternut Squash and Black Beans. Very tasty!

Sounds good and healthy. How did you flavor the squash and black beans?

Unfortunately, I didn't. Just roasted the squash w/EVOO, salt & pepper. I guess the millet could've used some more flavor.

Black beans always make me think of Mexican food. I would try some of those seasonings (cumin, oregano, chili powder, chipotle and lime juice). They should work with the squash, beans and millet if you wanted more flavor next time Just an idea.
