Grains, Squash & Beans

I mashed up some roasted acorn squash and
served it atop quinoa with a sprinkling of
black beans. An excellent combo. Mr. SV

I think I'm roasting a butternut squash tonight for some soup. If I have any leftover, I may try this later in the week...would be good with some quinoa!
