WTF Tuesday

Kashi Cinnamon Harvest with Almond Milk for breakfast (Mr. SV finished the Grape Nuts)...
Eggless Egg Salad on a TJ's British Muffin for lunch...
Lunch was so delicious, I wanted to eat more food. WF's Red Pepper Hummus with Pizzettina Crackers it was.
Veganomicon's Simple Seitan with A-1 Sauce and steamed Broccoli for dinner.
The last of the Rice Divine Chocolate Peanut Butter Ice Cream with extra TJ's Peanut Butter for dessert. The ice crystals did not detract one bit from the pleasure of this frozen concoction.
Coming up tomorrow: Who knows? If tomorrow is half as delicious as today was, I will count myself lucky.

Everything looks really good today. What kind of greens are those under the egg salad?
A question about the PB with ice cream you speak so highly of - does the PB harden at all?

Oh, my gosh, I'm lovin' that cereal choice! :-) But, I, too, think I would be very pleased with your food today, especially lunch.

You really have been having great food days lately, and today is no exception! Always a fan of the kashi and I love that the crackers and hummus made an appearance again :) Still jealous of the seitan and that is so strange that the ice cream always has the ice crystals after the first serving is taken out.

Re: the gluten free seitan, apparently someone else has already done it! There is a gluten free vegan cookbook out there that tackled seitan, I just need to get my hands on it! I need to make a list of the dishes I need to veganize because I always forget!

It's nice that you keep breakfast simple when working from home. I would probably waste a lot of time trying to come up with something. How's the seitan? I was looking at that recipe along with the chickpea cutlet one. Which would you recommend most?

I think you are the queen of making scrummy looking sandwiches...and all anyone really wants from life is a delicious sandwich...right? Well, it's high on my list anyway.

I agree with Rose that the sandwich is beautiful or "scrummy" as she says. What recipe do you use for eggless egg salad? Any recommendations?

FF, the greens were just Spring Mix. I grabbed a handful from Mr. SV's stash. I know you aren't a fan of ice cream, but maybe a lashing of PB might change your tune. It doesn't freeze.

Ingrid, both recipes are great and so different. You'll like both, I promise. Just don't try making your own Eggless Egg Salad whatever you do.

Rose, sandwiches are my favorite food! Especially with lots of Vegenaisse.

Miss Rachel, I buy my Eggless Egg Salad premade by professionals. I've tried making my own and it took a long time to get over the queasiness and nausea.
