Two Outstanding Recipes

Lunch was leftover Fagioli Allucelletto from Vegan Epicurean. It tasted even better today. Very gourmet!
I used two packages of TJ's Beef-less Strips, more than the recipe called for, but that turned out perfectly.This is a great recipe. Highly recommend!

I have the SB cookbook, but have never used it! I want to make the potato chip PB cookies though! haha

I also have the Skinny Bitch cookbook, but haven't made a single recipe out of it! The only thing I don't really like about it is the fact that a lot of the recipes are made with pre-packaged processed fake meats and stuff. But, overall, it is a great cookbook and I am looking forward to cooking with it soon! That stew looks yummy. I will have to try it. :)

I don't own the cookbook, but I see that potato chip PB cookie recipe on the website. Wonder what that tastes like?

Isn't it amazing how much deeper the flavor gets on the bean dish as it sits in the frig? I always think I should make it the day before we are going to eat it ..... but am never quite organized off to pull that off every time.

I've been wanting to make that beef stew. I love those Trader Joe's beefless strips so much...we don't have a TJ's in Memphis, so I have to stock up while I'm near one.

the recipe calls for "1-1⁄2 cups dry red wine." is this cooking wine or actual wine? i don't ever cook anything and am going to try to make the stew haha.

Cass, I use real red wine. It does seem like a lot, and a waste of a half a bottle of wine, but it works. If you are near Trader Joe's, get a bottle of Charles Shaw Cabernet, or any other $3 bottle of red wine will do.
