Another Mediterranean Day

I may need to change the name of the blog. Here is my Hummus appetizer for lunch today at from The Mediterranean Cafe. I got the usual, Salata Horiatiki -- Fresh Tomato, Cucumber, Mixed Olives, Red Onion with Lemon-Oregano Vinaigrette, Fresh Romaine and Pine Nuts.
Mr. SV had his Veggie Pasta. Everything was fantastic as usual. Dinner was Fagioli Allucelletto from Vegan Epicurean.
Another delicious and simple recipe.

Shenandoah,

I am so glad you liked the Fagioli. The name of the dish in Italian translates to "beans in the style of birds". I thought I should pass that on so you could use it when someome asks what you are eating.

Glad you liked it,
Alicia

I could see where the meal could look like a nest with eggs in it.

Shenandoah,

Good point! I hadn't thought of that. Traditionally the recipe doesn't contain polenta so I believe the name refers to the flavor combination. But you are right about the appearance.
