WTF Monday

This Organic Honey Crisp Apple weighed in at almost a pound. It was bought for breakfast at work, but since I decided to stay home today, I figured, why not just eat it at home? So glad I did. It was totally mind-blowing. Plus, a crunchy Apple belongs at home instead of a cubicle. Hard to be quiet eating this.

Dinner was a recipe recommended to me by Unknown: Mark Bittman's Sweet Potato Stew. I added a can of Black Beans at the end.

1 Pound Sweet Potatoes, cubed
1 Apple, peeled and cubed (Granny Smith)
1 Onion, chopped
Coconut Milk (TJ's Light Coconut Milk)
Chilis (dried or fresh), to taste (Jalapeño)
Ginger (one knob)
Curry Powder
Vegetable Stock or Water (water)
Peanuts, for garnish (didn't do this)
Cilantro, for garnish (didn't do this)

Preparation:
Sauté 1 pound cubed sweet potatoes, a peeled and cubed apple, chopped onion, minced chili (dried or fresh) and minced ginger, along with a sprinkle of curry powder in a large saucepan until the onion is soft, 5 or 6 minutes. Add coconut milk thinned with vegetable stock or water to about halfway up the sides of the mixture; cook until soft, then mash about half of the mixture. Garnish with chopped peanuts and cilantro and serve.

Wholly Wholesome Dairy Free Pumpkin Pie for dessert. This time the crust refused to adhere to the filling, but still tasted good.
More WFH grub tomorrow.

You know why the crust separated, right? It wanted you to stick it back together with peanut butter. Yep.

That dinner looks delicious. Too bad I can't have coconut milk or else I would make it.

Still have to try that pie. Its been sitting in my freezer for a few weeks now.

Well now I definitely have to have a giant apple for breakfast tomorrow. Sadly mine will be consumed at my desk though. I've been eating tons of apples this fall and not one has been bad :)

You bread for the sandwich looks so crusty and perfect and dinner looks amazing! I bet it was nice and warming and comforting and filling. I need some pumpkin pie in my life.

True, the noise of people munching in a office is distracting, even if it is a healthy apple of celery and carrot sticks... but at least these don't smell like other types of food :-)

I love that apple season is in full swing! Especially crunchy apples.

I am feeling inspired to make a stew soon, or perhaps even a chowder. This one looks great!

Huge honeycrisps are the best part of fall! Glad you liked the stew- i have been a huge mark bittman fan for years now.... You may want to freeze some so you don't get tired of it though. The coconut milk makes it.
I have seen the vegan pumpkin pies yet wonder if there is such a thing as a vegan pecan pie.....with the gooey center, not one of those raw non-pie things. Hmmm.

Hannah, now that is a very imaginative use for Peanut Butter. I'll try it on my next Pumpkin Pie slice.

VGG, don't stress about the pie. I had mine in the freezer for almost a year, just had to knock some ice off it and it was no worse for wear.

Sarah, I'm glad to know you're munching on good Apples. You haven't updated your blog in over three weeks, in case ya didn't know.

Alessandra, unfortunately, I think I'm guilty of bringing back a few odiferous lunches to my cube, but at least I'm always quiet.

Ingrid, it's great to have a big pot of something on hand that's for sure.

Unknown, I think this was my first Mark Bittman recipe. I'll have to see what else he has online. I did get a slice of vegan Pecan Pie a year or two ago but it was a big fail. Don't think it's been perfected yet.

Abby Bean, I've only had one apple in 2013 I think. I've been missing out obviously.
