Mr. SVegetarian graciously agreed to accompany me to breakfast at Le Pain Quotidien this morning. His need to exchange a jacket at the store situated right next door to LPQ had a little to do with it.

I have some butternut squash in my fridge but I've never cooked any before! Any suggestions?

I am sure mr SV will also quickly become enamored of the LPQ 'fu. Excellent start to the food day there. The mushrooms with the boca patties are a nice touch. I like tomato sauce on my butternut too- well, on nearly anything actually.....do you make it? Buy it? I'm a fan of newman's own and its on sale once in a while so i stock up.
Those coconutty mini cake bite things look so perfect as a dessert! Was there really passionfruit in there? Or did they mean passionate about the coconut....?

Those coconut bites look awesome. I really love coconut cakes - they are usually really nice and moist and not super sweet, just a really nice flavor.
Love the butternut squash chunk too. Roasted some kabocha the other day and enjoyed it a lot.

I'm glad that you were able to get out to breakfast like you wanted to! You definitely can't go wrong with that tofu scramble and some yummy crusty bread. The squash looks great too!
Re: Loving Hut - I have never been to the one in NYC. I've checked out the menu and it just doesn't look as good as the one in Orlando. So as of right now I've only ever been there in Orlando when I've visited my bestie. Every Loving Hut has a different menu which is probably the only thing I don't like about it.

VGG, I hope you bought a good Butternut Squash. Don't give up on it if it's not. Just split, de-seed, EVOO S&P on the innards, bake at 400 degrees for an hour with the innards face down on foil.

Unknown, it is just Wegman's .99/jar Tomato Sauce on the Chicken Patties. Passion Fruit in Coconut Bites sounds like a brilliant idea. You might want to keep that one to yourself.
FF, I've never successfully made Kabocha Squash. However, I made my first successful Smoothie this week, so maybe there is still hope for Kabocha as well.
RVs, I got Mr. SV back home in time yesterday to a good ride in. Plus football. So he wasn't too put out.
Sarah, all the Loving Huts are individually owned (like gas stations). I guess you're more into making your own food rather than eating out. Wish I was that way.
