WTF Wednesday

Roasted Red Pepper Hummus, Olives, Stuffed Grape Leaves and Artisan Crackers for lunch.
Celebration Roast and Roasted Acorn Squash for dinner.
Coming up tomorrow: Will I try the new Noodles and Co that opened near my work? If so, what vegan items do I order? There is much conflicting info on the web.

Looks like a spartan meal. You better be keepin' your energy up for all "teh kittehs" as they say nowadays.

BTW, I would like the stuffed grape leaves recipe if ya got one.

Those crackers look awesome! As does the squash. I always undercook mine and they don't get soft enough.

Hummus....wow, I haven't had any in two weeks. I think that may change tomorrow. :0)
Between you and VaVa, I'm really wanting to try stuffed grape leaves! Did you stuff them or buy them already stuffed? I'm off work Friday, so I'm heading to Whole foods. Trying to put together a list of some new things to try.
Looking forward to seeing what you get from Noodles & Co!

Indonesian Peanut Saute, Japanese Pan Noodles, or my favorite: Penne Rosa without heavy cream or cheese option. If I get the Penne to go, I add a little Tofutti when I get home to mimic the cream!

Yay for stuffed grape leaves! We are going to start a revolution! :) That cake looks SO GOOD, lemon and blueberry are a great combination. I've never been to Noodles and Co. but the menu looks so good! Can't wait to see what you decide on.

Lunch looks like a tasty selection, and squash with roast and gravy is classic and comforting.

Re: the kitties, sure you and your neighbor are both rescuers, but taking them in to look after them until they can be vaccinated, fixed, and hopefully find good homes is a step farther...big heart!!

Hi Shenandoah. Connecticut is still without power but luckily for me, during the week, I'm living in a part of Massachusetts that did not get affected badly by the storm. Not so lucky for my sweetie.

Have not tried Celebration Roast yet, but I'm very impressed with the Field Roast selections I've had so far.

How are those kitties???!!! So cute (!!!) although I know taking in new, needy animals is stressful and I applaud your efforts. Meow.

Those crackers all calling my name. I want them! I bet they're great with hummus.

As far as Noodles, we like it there a lot and get some from time to time. I love the Indonesian Peanut dish and we both love the Japanese Pan Noodles. The other dish that's vegan, I think it's a curry, was just "meh".

I'm curious what you say about Noodles & Co because my husband was going on a trip recently where I knew he'd be right next door to one. And I told him he should eat there, but then, like you said, I looked online, question marks started popping up. But maybe people were saying it wasn't vegan because of sugar, which wouldn't be an issue for you (or him), I assume.

I echo Ingrid with the Penne Rosa sans dairy recommendation at Noodles. It is fantastic. I've heard the pad thai isn't even vegetarian (fish sauce?) but nearly everything else is, and can typically be made vegan. Also, Noodles lets you trade out any veggies, or add more, to any dish. I really like the Chinese Chop Salad with tofu...no actual noodles, but their tofu is really delicious. They sear it on all sides.

Stacy, yeah, like I would stuff Grape Leaves. Good one. The Leaves came pre-stuffed in a package of eight from WFs.

FF, my mother always overcooked everything, so now I undercook everything. Except this squash. I dunno, just feel like sharing tonight.

Michelle2, I bought the Grape Leaves pre-stuffed. They were found in a little package where the Hummus is sold. Doubt WFs sells Frontera wine, but they have their own brand of inexpensive wine $3.99/bottle that is very good.

Ingrid, thanks so much, I went with your first suggestion. Wasn't bad. About as good as that Pumpkin Smoothie you forced me to make.

VaVa, save your chain restaurant meals for Chipotle. Noodles & Co. hasn't earned my rec yet.

Rose, my neighbor's view of the kitty situation is less loving than our's, so I'm still unsure if he's waiting for a 'thank you' gift of some sort. No one seems to know the etiquette here. As of now, I'm planning to keep the new family of four for myself.

Miss Rachel, this freak snow storm was way worse than 'Hurricane Irene'. Hope the weather people learned something from it for next time. Getting the power back is one of the best feelings in the world.

Jenny, looking for sugar in ingredients is something I have to learn to look out for. I searched online for Noodles & Co vegan info as well and it was confusing. Not as bad as when I searched for info on Jimmy John's. I'll never go there.

Jared, I've already eaten both lunch and dinner, so I missed your suggestion. Thanks anyway. I wasn't considering the Pad Thai cuz that had egg. Your enthusiasm for Noodles and Co. is duly noted.
