WFH Wednesday

I've been wanting to try the Tempeh on Tortillas combination ever since I saw this post from Morgan (approximately two weeks). Mango and Jicama Salsa is too fancy for plain old me so I made Morgan's Glazed Tempeh on a WF's Blue Corn Tortilla with Avocado, Shredded Lettuce and Hot Sauce...
It was good, but not as great as I was hoping. So next I tried Tempeh on a Yellow Corn Tortilla with Shredded Lettuce, Tomatillo Salsa and Sour Supreme. This was better (probably due to the Sour Supreme) Still not the stellar experience I'm looking for. A few more portions of Tempeh are left for future pairings.
Dinner was Okara Burgers and Roasted Potatoes.
Dessert was TJ's Cherry Chocolate Chip Soy Creamy...
Lots of Liberty Creek Cabernet Sauvignon...

Oh, and maybe tomorrow, try putting it in a wrap with rice (if you have some made) tomatos, shredded carrots, and balsamic dressing drizzled on top. This is my other fav. way to use this! just another idea...

I love tomatillos! I have been wanting to make some green enchilada sauce but those things are so expensive to buy!

Oh how I love country potatoes. They look so delicious...Good job on your attempts with tempeh. Morgan needs to do a video on how she prepares the tempeh because she has an act for it. Your pictures look like they all taste really yummy:)Thanks for sharing.

Well... they sure look good! :o) I can't say anything about tempeh though, because I haven't tried it yet. Sorry the taste wasn't what you were looking for.

The sour supreme would make it better. Looking forward to it for two weeks, though, is probably where you went wrong. Nothing could live up to that! Looks tasty anyway, though.
