WTF Wednesday

'Quinoa Avocado Salad' $5 from The Randy Radish for a late lunch. Quinoa, Black Beans, Sweet Corn, Tomatoes, Red Onions, Cilantro and Avocado combined with a Light Lemony Dressing.
The Randy Radish has set me back at least a day in CSA Vegetable consumption, but I had to try the 'Mock Tuna Wrap' for dinner. Described thusly: "Chickpeas and Red Onion form the basis of this veggie rendition of traditional tuna salad. Stuffed into a Whole Wheat Wrap with Fresh Greens and Grated Carrots." It was light and tasty.
Dessert was the 'Spicy Summer Rolls', described as "Two Rice Paper Rolls filled with Beyond Meat Chicken-Free Strips, Serrano Peppers, Carrots, Arugula, Peanuts, Rice Noodles, Mint and Basil. Served with our Peanut Dipping Sauce."  Very unusual Summer Rolls. My mouth is still on fire from the Serrano Peppers.
My CSA haul from Potomac Vegetable Farms today was: Chard, Hakurei Turnips, Peas...
Beets, Head Lettuce, Squash...
Basil and Scallions...I don't even have room in the fridge anymore for some of this stuff. It's sitting out on the dining room table.
Below are the Eastern Phoebe babies that hatched above our porch light. I counted five fuzzy little heads. They haven't even opened their eyes yet. No pics of the proud parents because they're not only tiny but also very active catching bugs to bring to the nest.
Not so tiny was this Black Bear that came around right after I filled the backyard feeder at 7am. He/she pulled down the feeder and calmly munched away for about a half hour. Yes, I refilled it later. I took this pic through the kitchen window.
More WFH grub tomorrow.

I love the little fuzzy birds! So cool. Is the bear a baby too? What do you put in the feeder?
I don't think I've ever had a rice roll but I always want to make them.

Whoa, a bear?!? Do they come around often? The baby birds are so adorable. The nest that is on our front porch light was abandoned, so no baby bird pics here.

Wonder CSA haul and everything from the restaurant sounds so delicious & summery.

Maybe you can trade some surplus turnips with the randy radish peeps...? Too bad you hate beets if i remember right, does mr Svegetarian hate them too? The basil would make a nice pesto.
The quinoa salad sounds like such a great combo. I order summer rolls whenever i can, the beyond meat is a nice touch. I made summer rolls once (trying to impress a date!) and its kind of a pain....

The Randy Radish meals look so good! I've made a similar quinoa dish, but never thought about a dressing. The wrap looks great, too!

Speaking of Beyond Meat, I noticed that they are carrying it for purchase at Whole Foods. Has it shown up in your region? I love spring rolls with peanut sauce!

Awe, how sweet! Love the baby birds! I hope the bear isn't visiting too frequently - I'm sure everyone from the fowl to the dogs have something to say about it!

A BEAR?! That's crazy! It looks so adorable in the photos but I imagine that if it were in my yard I would be a bit freaked out. The baby birdies are really cute too! You're spoiling us with critter pics :)

Great looking meals as always! The quinoa salad looks delicious and the wrap!! Yum! Great looking CSA haul too. I'm jealous of your squash! Whole Foods had zero zucchinis last time I went, wth!?

FF, the Bear probably a teenager if it is the Baby that passed through a few months ago. Black Oil Sunflower Seed is always the best feed. Thanks for the recipe link but I'm pretty positive the pups will get the Beets and Turnips, especially at the rate I'm consuming the rest of the vegetables.

RVs, yes, we've had Bears a lot. It's hard for me not to try and turn them into indoor house pets. I so want to.

Hannah, ha! I just want to give the Bear a big (Bear) hug. It so reminds us of our pup, Poley, the way it loves chowing down.

Unknown, so far the pups haven't come in contact with any Bears that I'm aware of. Mr. SVegetarian and I both hate Beets. The only thing I could think to do with the Beets is juice them with other vegetables. I made Summer Rolls once too. What a pain it is to soak those stupid wraps. They didn't taste so good when I made them and stuck to everything.

Ingrid, yes, my Whole Foods is carrying the Beyond Meat in boxes. I intend to buy some eventually and try to make 'Chickenless Salad'.

VaVa, Zucchinis must be making their way up north as we type. You will probably have them in a couple weeks.
