A third of a Blueberry Danish from Vegan Treats via Loving Hut for breakfast...
Some really great Blackened Tofu with various mixed vegetables and other Tofu off the WF's hot bar for lunch...
Mrs. May's Almond Crunch from the vending machine to make the afternoon go by a little bit faster...
The last of the CSA Soup for dinner...
'Tofu Reuben Spring Rolls' with Thousand Island Dressing from The Randy Radish for dessert. Like little condensed Reubens in a crunchy shell. Should have bought more.
My CSA haul from Potomac Vegetable Farms today was: Mint, Lettuce, Radishes...
Carrots, Garlic Scapes, Cabbage, Squash and Onions.
Mollykins says, 'No Beets this week? That's no good'.
WFH grub tomorrow.

Awe, Molly! Such a sweetie! If I find some beautiful beets, I'll have to see if Remy cares for them.

I hope you'll be making mint julips or mojitos with that fresh mint.

I am intrigued with the Tofu Reuben Spring Rolls - I think the Randy Radish has beat out the Vegan Van.

Awww Molly!! That sweet face, I love that she loves beets!! Do you give her the whole thing or just the greens? If she eats all of it does she get beet stains all over?

Great looking meals. Now you are down to a third of a sweet treat! Looks great though. Love the Mrs. May's treats too, yum!! Lunch looks like a great variety and hooray for the soup. Are you going to make more or do something else with that gorgeous haul? I second Ingrid, I'd love to see some mojitos with that mint!

Tofu ruben spring rolls?!? Whoa-zah. Perfect timing that you finished the csa soup in time for a new haul- i love how mild those french breakfast radishes are, maybe they will perk up your dip? I have used leftover bean dip as the "glue" for veggie lentil loaf if all else fails. Fresh mint is so good! Well, for fruit and beverages, kinda weird in salad.

I'm also curious about what Molly finds enticing about beets. I've only given the pups beets in treat form before, but I'll have to see if they like them raw.

Great looking spring rolls. Whoever came up with that is a genius!

Ingrid, yeah, we both showed our babies yesterday. I was thinking Mojitos as well. You need to show more Vegan Van now that it's summer.

VaVa, I roasted the Beets and all three Pups went crazy for them. Kept the Greens for the Soup. No stains anywhere but on me. Definitely making more soup.

Unknown, this is my first time with 'French Breakfast Radishes'. Are you saying I should try dipping them in the Dip or somehow add them to the Dip?

RVs, I roasted and cut up the Beets for the Pups. Don't know how they'd react to them raw. They definitely loved them roasted.
