Saturday, June 15th

No dining out today: A big Sarah Kramer Banana Pancake that went splat in the pan. TJ's Maple Syrup  on top for breakfast....
CSA Spring Mix with toppings off the local Salad Bar and Goddess Dressing for lunch...
Escarole and Lentil Soup (cobbled together from various online recipes) for dinner....
Melty Cleo Cups for dessert.
Hope to have a professional make some of my food tomorrow.

I'm seriously loving the high veggie consumption I'm seeing lately! Your salad is looks amazing and the escarole soup sounds so delicious. Is it me or does your pancake look like an adorable little turtle?! The way I'm looking at it, it's super cute! Perfect sweet treat to end the day :)

Looking forward to seeing where you brunch tomorrow :) I'm always so jealous! Long Island needs to get on the ball with vegan brunch options. Not that it'll matter to me in my summer of raw, ha!

I love the pancake! Looks like it has an outgoing personality. And such gorgeous veggified lunch and dinner! I have been making tons of salads, but how did i forget i like croutons?? Is the escarole still a little bitter in the soup?

I saw mention of chipotle's margaritas in previous comments- not recommended, unless you're having an especially aweful day at work and grab one at lunch ;)

Hi Shen! I've just flipped through your week, and I must applaud you for your warm meals (i.e. soup) and restaurant choices (PF Changs, La Sandia). After a week of humidity and heat (I still loved it), I've noticed that I only want cold things to eat. Ha!

I saw the CSA box, and this salad looks great - I, too, have taken items off the salad bar and added them to meals at home.

Hannah, Chocolate is supposed to melt in my mouth not in my hand! That's the American way.

VaVa, there are so many greens in the fridge! I miss my Potatoes and Faux Meat meals. This is not me!

Unknown, the Escarole isn't bitter at all. It's my first time, so I didn't know what to expect from it. Maybe it's bitter when raw? Thanks for the scoop on the Chipotle Margaritas. Wish they could be 'to go' like the Bowls.

RVs, in retrospect, I wish I'd cut off the splatty parts of the Pancake, but I like to 'keep it real' while totally hiding myself. Mike's parents are your personal CSA.

Ingrid, glad you made it back safely. Looking forward to seeing your trip recap.
