Hi-Fiber Monday

Lunch was about 1.5 pounds of Whole Foods Salad. Took over an hour to eat it all. Not that I'm bragging, but it did kill a lot of time at work.
Dinner was more Sauteed Tofu & Bok Choy. This has become my new favorite quick dinner...since yesterday,

Thanks for not bragging about your salad poundage consumption...it does sound like a great way to pass the time at work.

Got the cake recipe, thanks! I really like your addition of the cinnamon glaze, which I see is not called for in the original...great idea, sounds perfect for it.

Yeah, vegans don't suffer from disorders arising out of a lack of fibre, on the whole. Tofu + bok choy is a match made in heaven. No wonder it's your favorite dinner!
