Hi-Fiber Monday

Lunch was about 1.5 pounds of Whole Foods Salad. Took over an hour to eat it all. Not that I'm bragging, but it did kill a lot of time at work.
Dinner was more Sauteed Tofu & Bok Choy. This has become my new favorite quick dinner...since yesterday,
Lots of positive feedback on the Apple Apricot Cake. (If you click on the name of the cake, it should link you to the recipe at the NYTimes website. If not, let me know and I'll print it here). This dessert is moist goodness everyone will enjoy.

Thanks for not bragging about your salad poundage consumption...it does sound like a great way to pass the time at work.

Got the cake recipe, thanks! I really like your addition of the cinnamon glaze, which I see is not called for in the original...great idea, sounds perfect for it.

Yeah, vegans don't suffer from disorders arising out of a lack of fibre, on the whole. Tofu + bok choy is a match made in heaven. No wonder it's your favorite dinner!

We have a Christmas party to go to this Sunday, and I think this cake may be just what Santa ordered!

I bet people at work were jealous of your salad, even if you weren't bragging.

Hello, Ladies & Germ!!!

Yeah, it wasn't the most exciting post, I get it.

Morgan, bring it!

Michelle2, the cake is a winner. It will be the hit of your party guaranteed.

Jessica, no, not so much. My coworkers would be jealous if I came back w/a steak & cheese in a bag soaked with grease.
