Saturday, November 2nd

'Organic Mexican-Style Breakfast Burrito' $7 from The Randy Radish for breakfast. Savory Tofu Scramble, Salsa, Black Beans and Baby Spinach wrapped in a soft, Whole-Wheat Tortilla...
Below is Thumper back at home guarding the Randy Radish bag. Don't even think of trying to borrow it...
'Steak Salad' $6.95 at Loving Hut for lunch. A vegan version of Vietnamese Beef Carpaccio consisting of thinly sliced Faux Beef with Lemon Juice, Onions, Coriander, Red Pepper, Carrots and Chopped Peanuts. A light and unique dish. I will get it again...
Dinner was leftover Pita, Hummus & Fries from yesterdays lunch to which I added some Tomato. It all reheated/toasted up very well. Lebanese Taverna makes good Hummus & Fries (and Baba Ghanoush, but my mother took the rest of that home)...
more Fearless Chocolate for dessert...
and finally, here is a Red-Bellied Woodpecker visiting one of our feeders this afternoon.
An extra hour tomorrow to try and scope out good vegan grub. I'm on it.

So much yes to that fake steak salad!! Love the intensity of Thai/Vietnamese salads like that.

THANK YOU for that daylight savings time reminder. It always sneaks up on me.
The burrito is really intriguing. It has fillings wrapped up in every layer! Professionals.
The salad is unlike anything I've ever heard of! Sounds really interesting.
I'm looking at the baba ganoush from yesterday that yr mother absconded with. Pomegranates on top is a very classy touch.

Randy can do no wrong..... Great combo in the wrap adding black beans. Love the kitty pic! Haha!
That lunch salad looks so good-i usually see carpaccio dishes as the super thin sliced protein on a plate with a tiny greens garnish but yours looks so much better
Restaurant leftovers are the best- and that's great your mom likes the baba, maybe she will be easily convinced to go back :)
I'm jealous you get the sofritos before nyc! You'll have to let me know if its too spicy though...
Yaay for more sleeping- but booo for blackness at 6pm

I am so excited about the extra hour! Getting an extra hour of sleep but not waking up later is absolutely brilliant.

The breakfast burrito looks pretty fantastic. Adding peanuts to anything, like a salad, always takes it to another level. The Loving Hut menu seems to be quite extensive.

Thumper is doing a great job guarding the bag. ;) Beautiful woodpecker! Are the squirrels still gorging themselves on seed when they think no one is looking?

I love that Thumper made sure to get some fur on the bag, as well. Such a cutie.

I'm glad that the steak salad was good! It certainly looks delicious.

Such a beautiful woodpecker. Do you get them around your house often?

Hey Now!!!!

Hannah, this was my first Thai/Vietnamese Salad. You must have encountered them a lot being from 'that' side of the planet.

FF, it's when Daylight Savings TIme ends in spring that you really need the reminder. This Salad was right up your alley, super healthy...except for the faux meat.

VGG, yep, I did very well for myself yesterday. Took years of trial and error to get to this point.

Unknown, my first 'Carpaccio' was very pleasing. I wanted to try the Sofritos today, but was too full from breakfast. You may end up trying the Sofritos before I do.

Ingrid, I imagine that teachers, of all people, love that extra hour most of all. Gotta get some pics of the Squirrels trying to keep the Deer away from the feeders. The Deer are so timid and the Squirrels know it.

RVs, all our re-usable bags are covered in pet fur. Come to think of it, our clothes and cars are the same. The sheets.. anyway, we do get a lot of Woodpeckers, even a Pileated, but I doubt I'll ever get a pic of that.
