Le Pain Quotidien 'Chia Pudding' $6.25 for breakfast...
A 'Roasted Veggie' Salad $13.50 from California Pizza Kitchen for lunch. Warm Artichoke Hearts, Asparagus, Eggplant, Red & Yellow Peppers, Corn and Sun-Dried Tomatoes served over cool Romaine and Avocado. Fat-Free Balsamic Vinaigrette on the side...
Fantastic Foods Sloppy Joes on TJ's English Muffins with TJ's Teeny Tiny Taters for dinner...
Thought I'd do dessert, but I guess that didn't happen. Kind of a healthy day.

I'd say it's definitely healthy. And delicious. It's a tough line to walk. But you did it.

Definitely a great looking day! Always bonus points for breakfast served in adorable little jars ;) The salad looks really great today! They always pack in a lot of great veggies in that salad. Dinner looks great too. Those teeny tiny taters are always a favorite. And now I'm randomly craving english muffins. I should get some ezekiel english muffins the next time I'm at WFs.

What a beautiful breakfast to start your day! Hey, I just wanted you to know -- I saw that you've been munching the Alternative Baking Company cookies...I'll have you know, (I'm name dropping here) that I've met the founder/owner several times. He's come to a local veggie potluck a few times that we've gone to, and he's also the newish co-owner of one of our fave vegan diners here in town. Handsome to boot. Just thought it would be fun for you to know, he's only two degrees of Kevin Bacon from you.

Healthy and delicious day! According to the interwebs LPQ uses coconut milk- prob the good kind from a can. You could always do 2TB with a bit less milk.
That salad looks amazing-and now i'm craving artichokes.... I love the fresh ones yet refuse to buy them in nyc since they're beaten up and $$.
Fantastic foods really does live up to their name- the sloppy sandwiches look great! Random fact for you- those cans of Manwich sauce are actually vegan! Ha!

Whomever was working the salad prep station at CPK deserves some applause; that is a seriously gorgeous salad.

Sloppy Joes on English Muffins sounds absolutely genius. Some extra texture from the bread. Love the tots!

FF, not as healthy as one of your days, but I'm getting there. Keep teaching us.

RVs, it's a good salad, but just cuz I have to get carryout from CPK for lunches with my mother doesn't mean I am recommending the restaurant. I should emphasize that in the post.

Sarah, Ezekiel English Muffins are my favorite, but the Trader Joes brand are better than most.

Blessed Mama, you really seem to want me to know this information. Is this man single, because I can come west without Mr. SV if necessary.

Unknown, dang! I just emptied the remains of the Coconut Milk I used for the Bittman's Sweet Potato Stew. I'll buy more next time I'm at TJ's. I've done the Manwich Sauce with Boca Crumbles before, but I think Fantastic Foods are better, plus no High Fructose Corn Syrup.

VGG, meh, don't waste your $$ at CPK.

Ingrid, well, when you get CPK carryout, you just kinda dump the Roasted Veggies on top of the Greens yourself, but thanks for the applause there. Sloppy Joes on English Muffins isn't that great either. And, those aren't Tots, they're baby Fingerling Potatoes. C- for reading comprehension.
