Monday, April 13th

The rest of my Whole Food's Tofu Scramble with a Gardein Breakfast Patty for breakfast...
a Steamed Artichoke with Just Mayo and a dash of Balsamic Vinaigrette for lunch...
it was so fantastic, I ate another one...
More Gardein for dinner. This time Crispy Tenders with Heinz-57 and Common Market New Delhi Pasta Salad...
Sure turned out to be a caloric day...
More great grub on hand for tomorrow. Bye for now.

I was not really a mayo fan even as an omni and still am not really as a vegan but I bought some veganaise recently for a potato salad so maybe now to use it up I will purchase some artichokes. Classy touch with the balsamic.

Those do look like great artichokes! Great idea with the basalmic mayo combo. You do eat the stem, right?
That sounds like a nice flavorful pasta salad, and with the tenders it's practically picnic food! Nice ending with the cocomels. But you're nuts if you think this was some kind of high calorie day...!
My subway>bike>coffee route went smoothly this morning, i may have figured out the best way finally. Great to have that 20min ride to start the day when its mild like this morning.
How are your furry kids lately? Frolicking in the sun?

I love artichokes! I have to try the Just Mayo, balsamic dip. I always do garlic and extra virgin olive oil, or Earth Balance if I have it. The pasta salad looks so great, I need to find a recipe to try to make it. Another great food day!

Oooh I'm glad that this year's artichokes are turning out to be better! I would pass on the mayo as you know but the artichoke looks great. Looks like some really great spring eats are happening and I'm loving it!

I took pictures of the stuff I prepped yesterday so hopefully I'll get a post up soon ;)

FF, maybe your boyfriend Jarrod will steam up some Artichokes for you and have them prepared for when you straggle home from a long day at work. Sounds like his M.O.

Unknown, I eat every part of the Artichoke but the fur and the stabby inner leaf tips. Such a pain to get past those hurdles. Speaking of hurdles, I think i would rather sleep in the extra 20 minutes than bike to work, but that is why you are a successful career woman and I am a lazy dreamer. i will try to get some fuzzy pics up soon.

VP, i believe melted butter is the official french way to eat Artichokes, but I have never tried one that way. Wonder why?
