Lunch was a formerly-a-Nora-now-called-a-Shen-Sandwich (Nora gave me permission to rename the sandwich. It's all mine now!).
Butler's Soy Curls with Roasted Asparagus and Baked Sweet Potato for dinner.
A Magical Coconut Cookie Bar for dessert. Any complaints of vegan deprivation can forever be eradicated by these bars.

oo, it's been a long time since i've had one of those kinds of bars. they used to be one of my favorite desserts growing up, and i was so thrilled to find out how easy they were to veganize.
What is that mess on top of your spinach?? I remember you used to post these a lot but I forget...is it hummus or tuna?

Alessandra, I wish I could describe Soy Curls but I'm not really adept at describing things. They are in no way related to Tofu, Tempeh or Seitan. Any other Soy Curl fans out there that can explain them to Alessandra?
