Dinner was Chickpea Cutlets with Mustard Sauce (Vegenaisse & Grainy Mustard 50/50) and Roasted Acorn Squash stuffed with leftover Wild Rice.
I tried to veganize a cake recipe yesterday by replacing four eggs with ground Flaxseed and water. The result was all tough on the edges and sunken in the middle. The Orange Frosting was too runny. Still tasted okay though.
Frontera Cabernet Sauvignon/Merlot.

As for today's cake - so many can turn out that way. As long as it tastes good, keep eatin' it. It doesn't have to look pretty.
My boss gets those bowls every day almost. And the cake looks very tasty. I don't think things need to look good anyway. As long as they taste good. And whats this I hear about a picture?????

Hm, yeah, it's hard to veganize stuff sometimes and have it turn out like you expect..hell sometimes even vegan recipes don't turn out right. What was the original recipe?
Looks like a great food day all in all. I keep wanting to make your mustard/vegenaise sauce..it always looks like a perfect accompaniment...must remember to make some soon.
I made a let down cake recently too, but like you, we forged ahead and it wasn't so bad afterall.
The chikpea cutlet/acorn squash meal is a new fun meal on here that I dont think I have seen before! Way to get adventurous Shen!

the stuffed squash looks really good too. and hey, as long as the cake tastes good that's all that matters in my book.
