My first lunch out after being home-bound for three days was at Elevation Burger. Veggie Burger $3.59, Fries $2.59. Not the best deal compared to Red Robin's Veggie Burger, but the Cinnamon/Orange Iced Tea was excellent.
Dinner was homemade Vegetable Soup, made with all fresh vegetables procured today.
Dessert was several of the Brandy Pralines that I had scarfed up the day after Christmas at TJMaxx. $5.99/box for half off --Score!
Hello, I'm Shen. Today's crisp Virginia morning was enhanced by a foot of snow, so I got to stay home from work and snuggle with my babies. Another Turkey Sandwich w/Route 11 BBQ Chips for lunch.
Dinner wasChickpea Cutletswith Mustard Sauce (Vegenaisse & Grainy Mustard 50/50) and Roasted Acorn Squash stuffed with leftover Wild Rice.
I tried to veganize a cake recipe yesterday by replacing four eggs with ground Flaxseed and water. The result was all tough on the edges and sunken in the middle. The Orange Frosting was too runny. Still tasted okay though.
I can handle an award every now and then, but yesterday, Jenny bestowed on me a 'Four Fun Facts' Thing to fill out. I'm grateful, believe me, but these memes take away precious time from my favorite TV shows like Celeb Rehab and Real Housewives. One thing I've learned from the past is that I do not do well on these memes. My 'humor' is often misunderstood/not appreciated.

Gardein Crispy Fingers and Heinz 57 for lunch. So delicious, I could not resist eating six more 'fingers' a little later. They weren't as good as the first five, though.
Finally used up the last of my Groupon at Sweetgreen. Spinach Salad...
...and Black Bean Soup with slice of Bread (followed by other half Monday's Endangered Species bar).
Even though I was still full from lunch, I had a bowl of Skinny Bitch Beef Stew for dinner.
In response to readers inquiries, to make the stew, I use two packs of TJ's Beefless Beef Strips (cut into bite-size pieces) as well as a little Kitchen Bouquet and Marmite for extra depth of flavor.
No dessert tonight. Frontera Cabernet Sauvignon/Merlot.
Mr. SV & I were both home from work today due to icy road conditions, so for breakfast, I made the Banana Pecan Pancakes from Sarah Kramer's 2011 Calendar (month of January). Dianne already beat me to the punch on blogging about this calendar and my story is the same: Bianca turned me on to the calendar and now I'm going to be making a new recipe every month. I will not flip ahead to future months/recipes. Mr. SV & I thought these pancakes were great.
