Lunch today was the Burrito Bol from Chipotle -- Rice, Black Beans, Mild Salsa, Tomatillo Salsa, Guacamole and Romaine Lettuce. Dinner was Susan's Ribz and Roasted Butternut Squash.
Thanks, Abbs! I cut it in half and sprinkled some EVOO, kosher salt and fresh ground pepper on them before roasting the halves face side down for about an hour at 400 degrees.

Hi Alicia! They turn out different every time I make them. Last night, they turned out nice and chewy. I make these a lot cuz they're so easy.

Thanks for getting back to me. Different everytime ... that is very odd, I wonder why it happens.
If they are worthy of making frequently it sounds like something I should try. Thanks for bringing the recipe to my attention.

You should definitely try them. My seitan results always vary with every recipe. Even Isa's.
Your roasted butternut squash looks super super yummy.. did you roast it whole or did you cut in half?? YuM :)
