Tuesday, February 3rd

A quarter piece of a Randy Radish Mexican Breakfast Calzone for breakfast. On par with TFK's Tofu Scramble Wrap and a great platform for the leftover Guac and Pico De Gallo from Super Bowl...
More Randy Radish goodness for lunch...
My last Gardein Stuffed Cutlet with Imagine Mushroom Gravy and a Purple Yam for dinner...
another sliver of my Randy Radish Brownie for dessert...
Totally lucked out that I got to stock up at the Randy Radish storefront this past weekend. Bye for now.

I have missed some great meals these few days: nachos, MaPo Tofu, chili and cornbread, good looking stuff! A Mexican Calzone breaks all sorts of rules, but it sounds good.

If only the Vegan Van had been able to find storefront success like the Randy Radish!

Now that's an exciting breakfast! Randy must be very generous with their portion sizes, or you're a more delicate eater than most. That guac won't last long before it gets furry and will make you sick....
The purple yam is fun! Does it taste any different? That brownie wedge looks just as great today too....

Yes, finally finally i became more human again after sleeping thru a good part of this past weekend too.... Huge relief. No miso today but i did find a fab vegan choco chunk cookie that i called lunch alongside my almond milk cafe au lait. Balanced meal, right?? Chocolate + caffinee :)

Whoa!! Look at the breakfast calzone!! That looks amazing. And definitely a great way to use your Nacho accoutrements! I'm now craving some cornbread…although I'd probably take mine with some plain black bean soup. Mmm. The purple potato is gorgeous! That color is amazing! Still jealous of that brownie. I'm hoping to bake something fun this weekend during the next snow storm. We'll see what happens!

To be honest I like my brownies unadorned. They should be good enough to not need frosting that usually just makes them way too sweet for me to enjoy.
The yam is gorgeous though, I don't think I've seen one of those.

Hey Now!!!!!

Ingrid, maybe Randy should have made Breakfast Empenadas instead of Calzones. So sad about the Vegan Van. I always enjoyed those posts with the Popcorn on the side.

Unknown, it is a regular size Calzone, so way too much food for one breqkfast, but a great value when split up over days. Guac wastage is not my M.O. I would be bouncing off the walls and up all night if I ate a Chocolate & Caffeine lunch, but it does sound like a nice little party.

Sarah, what next snow storm?! what is going on up there?!

FF, I will be honest as well and say, I like my Brownies adorned. Adornment is insurance in case the Brownie itself isnt fudgy.
