WTF Wednesday

Kashi Oat Flakes and Blueberry Clusters with Flax Milk for breakfast.
An impressive BBQ Jackfruit Sandwich and Fries from The Randy Radish for lunch. They really did a great job with the BBQ Jackfruit and the Remoulade Sauce on the side was also excellent.
Boca Chikn Patties and Roasted Zucchini for dinner. Yes, again. It's good sh*t and I like it.
A Fruit Bar from The Randy Radish for dessert.
Gonna make every effort to go into the office tomorrow because I think they're starting to notice that I'm WFH more than allowed.

Yay for my favorite Kashi! I kind of want to get a box but that won't really help my gluten free goals. The jackfruit tacos look so good! I've never had jackfruit before, I don't even know what it tastes like. How would you describe it? Roasted veggies are always a great side dish and that fruit bar looks AMAZING!!

Boo for having to go into work. I guess you do what you have to do to be able to keep working from home. Oh man I'm so jealous that you get to do that.

I'm jealous of your bbq jackfruit. I've only had it once and loved it. We've been trying to find canned jackfruit here but haven't had much luck.

Could you get in trouble for working from home too much?

Do those blueberry clusters plump in milk like the strawberry kind did?
I only had jackfruit once, not on many menus. I see it in the asian groceries in chinatown but its always in a sugar syrup, which sounds weird to then use for a savory dish. The sandwich looks so delicious and sauce-y!
And hey, if dinner is good and you like it then that's all that matters :)
The fruit bar looks like a good balance of fruit and crumbley top-aka the best part.
The WFH option is so amazing, just bring cookies to any grumbling coworkers and be sure you're seen by the people who keep track of these things- i am sure that as long as your work gets done in the end it doesnt matter where from.

I've never had jackfruit before but it looks really good there especially with the sauce.

I've been hearing about jackfruit. I'm curious to try it but i don't know where to get it.

Also that cereal looks really good...I am going to have to buy some and try it out

VaVa, Gluten-free definitely sounds like the way everyone should be. The Jackfruit is kind of like Tofu in that it takes on the flavor of whatever you marinate it in. It's the texture of Artichoke. I liked this BBQ version of it. If you can edit photos just the same at home, you definitely should be allowed to!

Molly, I'm glad to hear your Jackfruit experience was positive. It's very common in our local Asian/International groceries. Maybe on your road trip you will see some. Yes, I can get 'in trouble' (just like in fourth grade) for WFH too much.

Unknown, no, the Blueberry Clusters stay nice and candy-like. This was my second time with Jackfruit. The first time I tried making Taco filling with it myself and didn't like the taste or texture. But these Food Truck Ladies knew how to get it to work. WFH is a heated topic in our office because the majority of 'our group' live scattered across the country and WFH full-time, yet three of us have to come into the office cuz we're within some undocumented mileage radius. The folks who 'care' that we come in wouldn't be in the office to eat the cookies cuz they WFH full-time. Phew! Long answer!

Hannah, I'm thinking they would eventually catch on that it wasn't me. But any other ideas are welcomed.

Mary, surprised you haven't had Jackfruit. I usually avoid it, but this time it was good.
