WTF Monday

Eggless Egg Salad on a toasted Rudi's English Muffin for breakfast...
Half a quart of 'Vegetarian Chili Soup' for lunch...
Emphasis on the word 'Soup'. Could have used more Beans and Whatnot...
Had there been more stuff in the Chili Soup, I wouldn't have needed to then eat these Crackers and PB...
Field Roast Franks and Potato Salad from Roots for dinner.
The Potato Salad needed more Celery Seed...suddenly I'm a recipe expert...
Coconut Ice Cream and Chocolate Syrup for dessert.
No critter pics today, but the Virginia Bluebells are in bloom...
as well as this tree in the woods...
Back to the cube tomorrow.

I love those Virginia Bluebells, they are so beautiful.

The food looks great today as always. Bummer the soup was more soup-y than chili-y (ha) but crackers with pb is always a good way to supplement a meal. Dinner looks perfect for spring.

Nice photography of the blooms; very lovely.

Sometimes restaurants or markets don't always have the recipes just right, I think alterations are acceptable (and additions). ;)

Coconut ice cream and chocolate syrup is especially appealing to me at this minute. Mmm.

Love the springy flowers lately! So pretty and colorful.
The chili soup has a decent list of ingredients, but doesnt look like "your spoon would stand up" ( i swear there used to be a commercial for chili that used that phrase). Peanut butter always saves the day!
Dessert sounds soooo good... Its finally ice cream season again :)

Such pretty flowers! We're finally getting a little bit of green grass here, so hopefully we'll be getting some soon. I'm glad you're posting them!

I grew up on soupy chili and never liked it. It should be very chunky and thick, IMO.

VaVa, Virginia Bluebells are my favorite so I post them every year on the blog. Repetitive, but it's my blog so I can do what I want dammit.

Ingrid, agreed on the alterations to professionally made food. This Chili Soup is a great candidate for TVP or extra Beans.

1eded7a4-91c0-11e2-bd5a-000bcdca4d7a, the Crackers are just good old Club Crackers. Not the most interesting or nutritious, but reliable.

Unknown, that's the thing, the Chili ingredients really work. Maybe I should drain it before eating the rest. Totally Ice Cream season.

Molly, yes! Chili should be thick and Chinese food should be Szechuan. Pretty soon you'll be enjoying lots of Cacti;-)
