Breakfast was the Banana Nut Waffles (made with Blueberries instead of Nuts) from Veganomicon.
Lunch was Tofu and Cashew Nuts $11 from Faang.
Dinner was the 'Mediterranean Picnic Sandwich' $7 from The Randy Radish. WW Baguette with Creamy Sun-dried Tomato and Walnut Pesto, Roasted Zucchini, Squash, Eggplant, Red Peppers and Baby Spinach. I needed at least two more of these. Unbelievably fantastic.
Dessert was a 'Coconut Passion' $4 Fluffy cake dipped in light glaze and topped with Toasted Coconut. The moist cake combined with the crunchy topping was heaven.
The CSA haul will be showcased tomorrow. I just did feel like photographing it tonight. Try not to be too disappointed.

Holy crap, what an amazing food day. I think I really want to dive in head first to that tofu dish and that sandwich. That sandwich looks amazing, what a perfect combo of flavors! The cake is beautiful too!
Okay, yes, that cake - epic. I don't even need to suggest peanut butter slathering the crap out of it.
I'm not even hungry but I'm salivating a lot after reading this post! The sandwich & cake both sound absolutely perfect. Fantastic day!

That randy radish can do no wrong! What a gorgeous sandwich combo. The cupcake sounds like the best end to a day of good food- the coconut frosting situation reminds me of my mom's homemade german chocolate cake frosting, tho last time i had it was decades ago (obscene amounts of butter involved)

Unknown, who makes German Chocolate Cake Frosting from scratch?! That would be something to try. I hope you are blocking out Wednesday nights because you're DVRing 'The Bachelorette' on Monday nights and don't have time to watch it till Wednesday.
