Lighter Fare

Collard Wraps with Garbanzos, Mushrooms, Tomatoes, Shredded Carrots and Red Onions for lunch.
More leftover Jambalaya Rice Mix and Butler's Soy Curls (the package said it made 11 servings, so maybe it really does because there is still tons left) for dinner with Roasted Cauliflower.

You did it! You're awesome! I particularly like the chickpea inclusion but I'm glad to see you stuck with the rice and soy curls and ice cream for dessert. Who knows, the world might implode if you didn't.

yay collard wraps:) i use any lettuce i have, but collards are a lot more sturdy.

Purely Decadent was on sale at our co-op for $2.99, so I got a pint of the cookie dough flavor. Mmmm.... my mouth is happy!

I want to start making green wraps like that. They look easy & yummy.
