Why Aren't I Skinny?

Lunch was one of the paninis I stocked up on yesterday. It heated up great wrapped in foil in the oven.
Dinner was more of the leftover 'beef' Stroganoff with Roasted Asparagus.
Below is an example of the type of noodles I use to make Stroganoff...
Dessert was a heaping tablespoon of Chocolate Peanut Butter...
Lots of Alice White Shiraz was enjoyed as well. See you tomorrow!

LOL love the title! im trying to remember what it was that made me loose the most weight. was it really when i became vegan or when i stopped eating a lot of carbs? i think it was the carbs. when i buy my deli sandwiches i dont ever eat all the bread, like i take the "guts" and a little of the bread and eat all that with more lettuce. then i share the bread with all my peeps(pets). remember when you had that sanswich bread that was flat?? you know that lower calorie bagel thingy?you could do that with the panini, just take a serated knife and shave off half the top. i have my things that i got in the habit of doing that add up in the long run. but im no stick, or barbie so i dont have to much room to talk.

I tried to make a would-be version of your fave panini yesterday. In the morning, I made the seitan (roughly following Bryanna C. Grogan's recipe from her Chinese cookbook, but dropping the sesame oil so it wouldn't evoke Asia so much) and the carmelized onions, and bought baby spinach, a jar of roasted red peppers, and some ciabatta bread. I already had some daiya on hand so all I did was saute the seitan and and the bread in a little olive oil, and assemble. It was pretty damn delicious! Thanks for the ingredient list!

Michelle, thanks for the suggestions. I cut my hamburger buns in half like you describe. I need to do more lettuce wraps!

Stacy, if you have a blog, I can't see it. I sure am glad you enjoyed the panini. The good thing about making them yourself is that you have the ingredients to make many more paninis.
