An Attractive Food Day

To all the innocent people that came to my blog yesterday and left screaming, "OH MY EYES!", I apologize. I've deleted yesterday's post, thanks for giving me a second chance. Here is my lovely salad from Whole Foods today:While there, I picked up a vegan Pumpkin Pie for $6.99!

A Good Lunch, A Great Dinner

Lunch at Mimosa today started with Spring Rolls...
My Kung Pao Tofu was good...but not as good as it used to be.. Mr. SV wanted to show his Szechuan Stir-Fried Vegetables.Dinner was Alicia's Cutlets with Roasted Carnival Squash.

I thought these were super delicious. I loved the texture (even though mine didn't come out crispy on the outside and chewy on the inside). Thanks, Alicia! Great recipe!

Nothing New To See Here...

My sprouts are growing into major plants. I had another handful today in my Hummus and Tomato Sandwich.
Dinner was a piece of Seitan shaped like Mongolia w/A1 and a Baked Potato w/Sour Supreme.

Italian Theme Day

Lunch today was the "Penne Mediterranean" -- Mushrooms, Spinach, Sun-Dried Tomatoes, Caramelized Onions, Pine Nuts and Olive Oil at Brio. A mini-loaf of crusty bread was also consumed.Dinner was Boca Chick'n Patties Parmesan Style, aka w/Prego Sauce, FYH Cheese and a little Oregano.

Lasagna Roll-Ups

This past weekend, I made Lasagna Roll-Ups.
I used Susan's recipe for the filling.
Tonight I heated them up for dinner.I was way too generous when filling the noodles so I had a bunch leftover and made a non-rolled-up lasagna:

Repeats

I made this dinner last year (before I found out that you're supposed to focus the camera). We had it again tonight and it was even better. Millet, Butternut Squash and Black Beans. Very tasty!

Sprouting

The Sprout People say their seeds can last centuries "if stored properly." I've had this bag of Lentil, Adzuki and Garbanzo seeds that has been sitting on our kitchen counter for over eight years (don't ask) when recently Alicia motivated me to get back into sprouting.I soaked a half a cup of the seeds for about eight hours, drained and spread them out in clean open spaghetti sauce jars. I made sure to rinse the beans a couple times a day and within forty eight hours, we had little tails... Two weeks later and I now have lots of crunchy Sprouts!I don't use cheese cloth or a cap on the jars -- just fill them with water, drain and put the Sprouts back in their jars.This method helps me pick out the non-performers, of which there were hardly any! Today I enjoyed a handful of Sprouts with WF's Zesty Hummus and Tomato on Whole Wheat Bread.

Day Thirty One

In my on-going quest to understand the appeal of Eggplant, I had Baba Ganoush for lunch today at The Mediterranean Cafe. I knew if any place could do well by Eggplant, it would be this place.
It was good. I ate all of it, of course. Still don't get it though...
Mr. SV's Veggie Pasta was phenomenal as always.
I would've loved to go out of Vegan Mofo with a bang, but as is my style, I'm going out with a whimper instead. Happy Halloween! We return to our regularly scheduled programming tomorrow...

Day Thirty

Today's lunch was at Clyde's Tower Oaks Lodge. The 'Mediterranean Veggie Pita' - Spinach, Roasted Roma Tomatoes, Pickled Red Onions, Roasted Red Pepper, Hummus and Kalamata Olives with seasonal fruit $8.95. It was more delicious than it appears and a Kalamata Olive got in my seasonal fruit cup. I think olives are a fruit?Dinner was Chickpea Cutlets with Sweet Potato Fries and a Curry Sauce (Curry Powder mixed with Veganaisse to taste).

Lunch today was the Veggie Burrito Bol from Chipotle. Dinner was Mr. SV's Thursday Night Pasta -- This time with TJ's Capellini, Coppola's Porcini Marsala Sauce, Boca Crumbles and TJ's Meatless Meatballs.Mundane but delicious and cruelty free!

For lunch today, I tried to recreate the Veggie Sandwich that I've been enjoying from ZPizza.
I put the veggies on a Ciabatta Roll from TJ's. ZPizza's sandwich wins this round.In celebration of our oven being fixed, dinner was Boca Burgers and Oven Fries.

Day Twenty Six

Lunch today was the Veggie Sandwich from ZPizza and a cup of Garden Vegetable Soup from Panera. On Saturday, I made Veggie Chili (our oven is still broken, so it will be stove top meals for a while). I had mine in the bread bowl that came with my soup from Panera:

This was my first time eating out of a bread bowl. I'm not sure what I was expecting, but it wasn't as fun as I thought it would be, it was actually kinda difficult.

This was my first time ever making Wild Rice, Alicia said it wasn't difficult and she was right! (Its not undercooked, that's just the Earth Balance making it looking wet).

Day Twenty Two

Lunch today was carryout from ZPizza. We still don't have the option of vegan cheese here at the Virginia locations, so I got the Veggie Sandwich (sans cheese).
Avocado, Tomatoes, Lettuce, Cucumbers, Artichoke Hearts, Caramelized Onions and Italian Dressing on a French Roll. How could that combination be bad? It cant be. All for only $5.95
Dinner was Mr. SV's Spaghetti -- Barilla Whole Wheat Capellini, Classico Spicy Red Pepper Sauce and Boca Crumbles. No TJ's Meatless Meatballs tonight, because the oven is broken.

Lunch today was the salad that I make when I'm at home for lunch: A head of Romaine, a half a bottle of Goddess Dressing, a handful of Croutons and 1/2 a package of TJ's Chicken.Dinner was a TJ's Valencia Peanut Butter and Banana Sandwich on TJ's Multi-Grain Bread.
