In my on-going quest to understand the appeal of Eggplant, I had Baba Ganoush for lunch today at The Mediterranean Cafe. I knew if any place could do well by Eggplant, it would be this place.
Mr. SV's Veggie Pasta was phenomenal as always. I would've loved to go out of Vegan Mofo with a bang, but as is my style, I'm going out with a whimper instead. Happy Halloween! We return to our regularly scheduled programming tomorrow...

My hubby isn't an eggplant lover either, so you have company. I love eggplant but didn't always. It if isn't prepared correctly it absorbs too much oil and just gets an unpleasant mush and slime thing happening. I starting enjoying eggplant after I began drying it out before preparing it. If I find eggplant at the farm market tomorrow I will buy some and post a recipe so you can read what I mean by drying it first.

I can't believe we made it to the end of Mofo...great job keeping up the posts...the eggplant and other dishes all look really good.
