Day Fourteen

I had leftover 'beef' Stroganoff for lunch today.
For dinner, I made Peppers, Onions and Tomatoes in Amarone Sauce from Vegan Epicurean.I didn't have fresh Tomatoes or Pine Nuts.
The Amaranth was good and the veggies were good, but the mixture will take my taste buds some getting used to. I'm looking forward to trying more recipes from this site.

Shenandoah,

I just got in from cooking class and couldn't wait to see how the recipe turned out. Was the wine flavor too intense? My husband and I were serious red wine drinkers (probably too serious) so I maybe should have mentioned that in the recipe.

Without the pine nuts the dish may have been too low in fat to carry the flavors. If you have leftovers I would suggest a drizzle of olive oil to see if that helps.

I drink my fair share of vino as well, I didn't find the wine flavor intense at all. Mr. SV is planning to eat the leftover veggies on rice, we ate all the amaranth. (Also, I didn't see where it in the recipe at what point to add the peppers)

Good catch on the peppers. I made that edit, I put them in with the onions and garlic.

The wine wasn't intense? Did you use Amarone? Since Amarone is a raisinated wine it is normally fairly intense for the price.

I didn't really notice anything about the wine. It was a Shiraz -- three buck chuck.

I think the Shiraz may have been the problem. Amarone is a big bold Italian red wine and was the dominant flavor in the recipe. Sorry if I didn't make that clear in the recipe.
