Easter Eats

Lunch was a formerly-a-Nora-now-called-a-Shen-Sandwich (Nora gave me permission to rename the sandwich. It's all mine now!).
Butler's Soy Curls with Roasted Asparagus and Baked Sweet Potato for dinner.
A Magical Coconut Cookie Bar for dessert. Any complaints of vegan deprivation can forever be eradicated by these bars.

Never seen those soy curls before (I live in NZ), I wander if I could make them with tofu.

oo, it's been a long time since i've had one of those kinds of bars. they used to be one of my favorite desserts growing up, and i was so thrilled to find out how easy they were to veganize.

Hello, Internet Pals!

Alessandra, I wish I could describe Soy Curls but I'm not really adept at describing things. They are in no way related to Tofu, Tempeh or Seitan. Any other Soy Curl fans out there that can explain them to Alessandra?

VF, I believe it is a four or five layer bar. Highly recommend.

Michelle2, the Coconut Bars are so excellent. I'd love to see Tony try to resist them.
