Thursday, December 11th

The other half of my Randy Radish Breakfast Burrito for...breakfast...
A Mashed Avocado Sandwich with Baby Spinach and Shaved Carrot for lunch...
Sweet Earth Veggie Burgers with Roasted Cauliflower for dinner...
These were delicate and flavorful, but not outstanding. I often worry (well, not that often) about potential vegetarians being turned off by mediocre Veggie Burgers and thus giving up on becoming Veg. Wonder how often that happens?
Something that is outstanding: Trader Joe's Speculoos Cookies. Wow! I thought these would be boring bland Cookies, but they were so tasty. Gotta stock up. Thanks, Ingrid!

I have been meaning to hit Trader Joe's for a while now - it's been a long time between visits, but I'm afraid of grabbing too many unnecessary things...like those cookies.
I'm not a big burger person but the burgers look pretty good. They are very often hit or miss, though.
Very delicate shaved carrot on the lunch sandwich. So very LPQ.

Your lunch IS like an LPQ "tartine"! Fancy and delicious! At least it was just those two burger patties. I suspect new vegetarians start with the basics from gardenburger or morningstar that are more mainstream....
Those specaloos cookies are so good! Just like biscoff ones.

Hmm. Your job situation sounds worrisome. Been there myself. I don't remember exactly what you do (programmer..? ) but look at elance.com- it has tons of virtual job listings, maybe something for your plan B. No good bagels near work so i made do with the hot street nuts (cashews)

I have had the same thought about veggie burgers. While there are a lot of delicious ones, there are an awful lot of meh burgers out there, and often they are expensive too!!

Your lunch sounds so perfect to me! And it looks quite lovely too. I'm not a huge fan of veggie burgers so there are few brands that I like but I agree with Unknown that new vegetarians would probably go for Boca or gardenburger. I have to try those speculoos cookies!! They look and so good and would be perfect with tea on a cold day.

Unknown, yep, i made a 'Tartine', except I didn't eat it with a fork and knife like the one time I got fooled into ordering a 'Tartine' at LPQ. I am a programmer, so fortunately, there are some jobs out there for my skill set. Hot Nuts! Awesome! Are you trying to eat everything in your apartment so you dont have to pack it up to move?

Ingrid, I have been looking for the Cookies all year, but they were really tucked away. I'll stock up next time I go to TJ's.

VP, exactly! the most expensive Burgers are usually the mushy ones.

Sarah, you could probably recreate these Cookies at home, but oh! they are great for those of us who are too lazy to bake.
