I Love Big Lots


They have lots of items that for one reason or
another, didn't succeed in a regular store. For
instance, today I saw bags of Pringles Potato
Chips. I was able to scarf up several bottles
of this Annie's dressing for 80 cents each. The
wafer cookies were vegan also. The JujyFruits
were just an impulse item at the checkout.

Thanksgiving Fixins

GRAVY

Wild Mushroom Gravy from Whole Foods.
MASHED POTATOES...
I boiled..
..and mashed five pounds of Yukon Gold potatoes
with a stick of Earth Balance, a cup of TJ's Soy
Creamer and some Roasted Garlic.

STUFFING

This Pepperidge Farm Stuffing mix is vegan,
but does contain High Fructose Corn Syrup.
You just boil 2 1/2 cups of veggie broth w/eight
tablespoons of Earth Balance, dump in the bag
of stuffing mix...
and a cup of sauteed celery, onions & peppers


BREAK
This buffet server is to keep things hot when
there's no room in the oven.

SPINACH
Seven and a half pounds of spinach was steamed
down to this:


DESSERT
Costco Apple Pie is apparently vegan.

My Birthday


Mr. SV brought in dinner (Curry Supreme) tonight
from our favorite restaurant, Sunflower.

And I baked myself the worst cake ever. Dry
and crumbly -- those white bits are stale
confectioners sugar.

Once-A-Year Pumpkin Pie


I baked the pumpkin.

Scraped out the innards.


Pureed with silken tofu.

Added sugar & vanilla....


...salt, cinnamon, ginger and cloves.


Spread it into a Keebler Graham Cracker pie
shell.
.
Baked it for an hour.



I only make this pie once a year and I am no
longer bringing it to Thanksgiving dinner because
I'm sick of hearing 'Ewww! There's tofu in it????'

Vegan Suet

When the weather gets frosty, I keep these
treats out for the birds, squirrels and
raccoons.

I combine inexpensive peanut butter with
corn meal (some people include flour).
Mix it into a putty-like consistency.
and create these patties that fit in standard
suet feeders. I store them in the fridge.
It may take a few days to get noticed, but once
it does, the birds -- woodpeckers, nuthatches,
tufted titmice and, unfortunately, starlings --
will come. Often, a squirrel will manage to
open the holder and just take off with the
whole patty. I take that as a compliment.
(Try to avoid putting them out before a
rainstorm).

Whole Foods Stuffed Seitan Cutlets


Just in time for Thanksgiving, Whole Foods
has Stuffed Seitan Cutlets in their prepared
foods case. The cutlets are stuffed with wild
rice and cranberries and coated in bread
crumbs. They're about $4 each, but
I believe they're worth it.

Weekly Soup - Split Pea


This week's soup was CPK's Split Pea Soup.
Started with boiling the peas with onions, herbs
and spices.

Pureeing the pea soup.

Adding carrots and celery...
...and cooked barley.
It was not as good as CPK's, but it was very
delicious. I would make this recipe again.

Taste Of Burma


Lunch today was at Taste Of Burma in Sterling.
We started with the Samosas and Fermented
Tea Leaf Salad

I had Tofu and Pickled Mustard Greens.
Mr. SV had Spicy Stir Fry Vegetables.
The portions are small and the food
is expensive but it's good for a rare
treat. I wish I could provide more
details, but the website is currently
down.

Grains, Squash & Beans


I mashed up some roasted acorn squash and
served it atop quinoa with a sprinkling of
black beans. An excellent combo. Mr. SV
approved!

$3/350 Calorie Lunch



Yes, I ate all three servings the package says
it contains, but it only totals up to 330 calories.
With a drizzle of Mushroom Gravy, it was an
inexpensive and delicious meal.

Lunch At Home


I was telecommuting today, so I just made an
open-faced Avocado, Spinach, Tomato and
Goddess Dressing Sandwich on Trader Joe's
multi-grain bread. I still cant figure out what
to eat for dinner, but if it's something different
I'll post the pics.

Veggie Sub


I brought some Yves 'Salami' to have with my
Veggie Sub from A Deli in Herndon today, but it
was totally unnecessary. The sub was delicious
without the faux meat. Piled high with lettuce,
tomato, onions, sweet peppers, hot peppers and
oil & vinegar. A Deli currently has the best
subs in Herndon. It's all in the bread.
